$2 Meal

Top two complaints about being veg are (a) the price tag and (b) the time.*

This meal cost two dollars.

And that expense includes both bowls plus [un-pictured] second helpings.

Balanced, whole foods based, with all the macronutrients represented.

And it took 10 minutes to make.

All you need is corn meal + eggs + avocado [all organic!].  Simple enough right?

Jazz it up as you want afterwards, but this basic combo will do your appetite and your wallet just fine.

Green Eggs & Cornmeal

Ingredients:

  • 1 1/2 cup organic corn meal
  • 3 cups liquid (water/plain almond milk)
  • 2 organic eggs
  • 1/2 avocado
  • (optional) 1 tbsp olive oil

Directions:

Bring water to a low boil.  Add corn meal and stir.  Reduce heat so it doesn’t bubble and splatter all over the place.  Continue to stir it occasionally until the corn meal has cooked and reached a porridge like consistency.

Crack two eggs in a hot pan sprayed with cooking spray.  Turn heat to medium and cover with a lid so the eggs will fry on the bottom and steam on the top.

Once egg whites are entirely cooked and yolks have a sheer color on top remove from the heat.

To assemble, scoop corn grits into a bowl, cover with a fried egg and sliced avocado. 

And dig in!

Add a drizzle of olive oil, a squeeze of lime juice, or salt & pepper if you wish.

I added some fresh grated parmesan cheese to Kyle’s bowl (in between scoops of corn meal so it got all melty).

*I realize the transition from carnivore to veg head can be a weaning time, so if you’re buying faux meat products and processed alternatives it may seem expensive…but you could just as easily be a whole foods connoisseur for a fraction of the price.  Bulk bins are a great place to find various grains, beans, and nuts that can make a meal ring in at $2 or less.  And if you don’t have access to cheap bulk bins, search online

    This looks so good. Eggs & avocado are one of my favorite combinations. I had something really similar over grits the other night (trying to use up a container before I move), with a bunch of green veggies mixed in.

    do it! its the easiest and cheapest GF grain aside from oats. you can do so many things with it…breakfast, lunch, dinner…sweet and savory…etc.

    Eggs and avocado is the best combo!! This looks so good. I love how you show that healthy eating does not mean it is expensive, it can be a bad excuse to eat unhealthy for some people

    I love this idea! It would be great if you did a semi-regular kind of cheap and easy meal thing to help dispell the veg is expensive myth-
    I actually use those polenta tubes to make “tofutatta” muffins, the slice of polenta in the bottom of the cup (spray w olive oil spray) and add a pureed tofu/veggie mix and bake up for a grab and go thing, best served with a gross sounding mix of half ketchup half hummus 🙂

    Yumm. I do about the same kind of thing for breakfast/ lunch/ dinner a lot. I like to add some salsa and sometimes use quinoa as my base grain. Looks so good I think I’ll eat a bowl of goodness tonight : )

    I’ve just subscribed to your blog, and I love your stuff so far!

    This looks so tasty… we have chickens in our backyard and I cook eggs for my fella’ every morning after he ‘collects,’ his breakfast… every day is an easter-egg-hunt! 😀

    I was wondering– I’ve heard that it’s very hard to find non gmo corn and that there’s no really organic corn either… have you heard about this? Is there any truth to it?

    I can’t eat eggs or corn (I have IBS too and a host of other food allergies from corticosteroids when I was a kid – the asthma was caused by the food allergies! YEESH!) but my fellow likes them.

    We are committed to only organic foods, so if this corn stuff has some truth, I’d like your 2 cents on it.

    I am gluten-free-organic-mostly-vegan gal, but I completely agree with you when you say you’re not defined by what you eat. 😀

    Anyway, your blog ROCKS MY SOCKS!

    This looks totally yummy substituting scrambled tofu for the eggs for me. And I agree, not eating meat can be extraordinarily inexpensive if you want it to be. one of my vegan chilis is 14 cents a serving!

    hi love! thanks for saying hi and leaving such a nice comment! i totally wish i could have a chicken…maybe some day ill move out of LA to the burbs and have some land…anyway. i digress.

    i have such a hard time deciphering whats propaganda and government BS and whats real when it comes to corn.

    here my 2 cents.

    the reason im passionate about organic when it comes to corn (and soy) is because i feel like it gives me a certain level of security that it also wont be genetically modified. GM substances are prohibited in organic production. i also know there is a very rigorous (and pricey) process involved in getting certified organic and non GMO so if it has the seal on it, i feel its important to reward the company for their investment.

    i realize there are some times when i cant avoid it, but when i do have the option i choose organic.

    i know there are definitely GM corn products i’ve eaten recently (like in tortilla chips at a party brought by guests) but i also know when i’m grocery shopping and preparing my own stuff it’s definitely non GMO and organic.

    Elise, I know you’re a big fan of the rice cooker…have you ever done cornmeal in yours? I recently started cooking polenta in mine and it turns out great! Real simple…cornmeal, water or veggie broth, diced or whole cherry tomatoes, and nooch. The tomatoes “melt” into the cornmeal and the nooch makes it all cheesy and creamy…you’d love it!

    thanks for the heads up. ive done it in the crock pot, but never the rice cooker. have you tried steel cut oats in the rice cooker…because those are another winner!

    just had this for dinner–but a slighte alternative. i had a sweet potato that was on its last legs, so i roasted that, topped it with 2 fried eggs and a ripe avocado. absolutely delicious
