What a Monday

I didn’t leave the apartment all day. 

I didn’t get a WINK of shut eye (I’ve been up for over 55 hours straight). 

I ate half the bag of cereal (I lost track after bowl number 4). 

I watched the entire first season of 30 Rock.

I attacked a jar of peanut butter with nothing but a spoon.

I rocked sweat pants the entire time.

Oh, and I polished off the last few slices of vegan cheesecake

The crust was still perfectly moist and crumbly (CoverMate what whaaaat).

Vampire weekend and a new project

This weekend was not my finest in terms of scheduling.  With back to back night shifts, day time yoga classes, and the desire to squeeze in a run when the sun came out from hiding, there was hardly any time for sleeping. 

Ambitious?  Or ridiculous? 

Either way, I snacked much more than I composed real meals because my body was so out of whack with all the time adjustments.  Awake all night, asleep all morning, awake all afternoon…sometimes it’s just too confusing for my poor GI system.

I wound up finding a solution in small plates of nibbles.  And frequent ones at that.

Before leaving for work on Saturday I had a huuuuge bowl of cereal.

This is my new favorite.  Nature’s Path Heritage High Fiber Flakes.

So so so good.  It’s got the best crunch and a perfect hearty bran flavor.  Love it.

This bowl has Gabriela written all over it.  :)  In addition to this banana/blueberry combination, I tried it in a parfait form, too.

What started as a simple bowl of berries (strawbz and bloobz), wound up getting topped with plain greek yogurt and shredded coconut…and was it ever a delish creation!

Then to work I went.

I brought a salad with red quinoa, spinach, and roasted root veggies with me to work.

I also had some snack-a-doodles (spelt pretzels, dark chocolate covered almonds, and raw almonds), plus dried mango, a home-made chewy dried fruit and nut bar, and two apples

Pink ladies have been inching closer and closer to edging out galas in my apple ranking.  Their crispy tartness is addictive.  Also addictive?  Newman’s Own spelt pretzels.  Sadly, the salt makes me feel bloated and yuck.  Try as I might to moderate my intake, I end up either eating so many that I have a 6 months preggo side profile, or feeling deprived.  I should just not buy them and avoid the problem all together, but (clearly) Whole Foods impulse buys are my Achilles heel.

 

When I got home from work on Sunday morning Kyle was already awake.  Wahoo!  I like when others are suffering up at the crack of dawn with me.  Kidding.  Ish?

The weather was actually rainy (the nerve!) so we both cozied up to some coffee

To clarify, I actually showered before even sipping a drop of caffeine.  I’m way too much of a germaphobe to do anything after work without first cleansing the hospital ick off my bod. I am truly incapable of skipping this step, regardless of how starving or tired I am.  OCD alert.

Later, feeling perfectly content in my PJs, I made myself a massive bowl of oats with blueberries, walnuts, and shredded coconut.

While the oats cooked on the stove, I found myself mindlessly digging my hands into the walnuts over and over again.

I’m just guessing here, but I think I ate over a cup of nuts before my breakfast was even ready. 

Once my bowl was perfectly photographed, we decided to watch a movie (Sunshine Cleaning).  But as you’d expect after pulling an all nighter, I promptly dozed off. 

I woke back up just before noon and made myself another snack plate.  I always wake up from naps STARVING.  Regardless of how much I ate before nodding off.  I think this is a fairly common phenomenon – at least among others I’ve mentioned it to.  Weird.

Post snackage, I managed to eke out a Jillian workout.  It was rather pathetic, but at least I tried.

Then it was time for more snacking.

Eventually it was time for work, again.

I had a pre-shift meal (peanut butter pita & cinnamon pear) and then packed up the same old same old.

Snooze-fest salad (but at least it tasted good).  It helped that I topped it off with a heaping spoonful of hummus.  On the side were pistachios, a home-made fruit and nut chewy bar and a pink lady.  I actually packed another two galas too.  All three were eaten in the wee morning hours.  :)

After leaving work Monday morning I treated myself to a soy misto.  Today’s agenda will hopefully include some shut eye. 

Before I sign off, though, I want to discuss a new project.  As I mentioned in the post title, I have a neat challenge for the coming month.  I’m going to call it…

Alphebruary

It’s nothing crazy, just a fun little idea to change up my eats.  Feel free to join in if you want!  Here’s the plan:

For each day of the month I will be working through the alphabet and trying a new food starting with each letter. 

February 1st = A

February 2nd = B

And so on…

The idea is to try something new, not to simply eat an apple and a banana and call it a day.  I want to get creative!  Amaranth, bulgar, etc.

And since February has 28 days, I have a couple of days of leeway in case things get off.   Fun right?  So who’s in? 

Feel free to link back if you join.  You can do one letter or all, I don’t care, and at the end of the month (or maybe week by week) I will recap.  It’s a perfect excuse to try that new item you’ve been to scared to get around to.  No more putting it off.  So start brainstorming what you want to try because February 1st is tomorrow and that means ALPHEBRUARY is kicking off!

Beat box wrapping

When I get behind in blogging, I tend to get overwhelmed and as a result meals fall into the undocumented abyss.  Sometimes I’m able to catch up, but sometimes I have to simply cut my losses and move on.  I never want emptying my camera to feel like a chore, so I apologize.  To the yummy food that misses it’s moment in the spotlight – I’m sorry.  To you all for neglecting to share some mighty fine meals – I’m sorry.  Alas, such is life.

This weekend is already busy and it’s only just started (how does that happen?).  In lieu of recounting every nibble in detail, I’m going to stick to the basic wrap up.  Get it!?  Wrap up.  [pathetic pun]

Kyle gets all the credit for finding these Alvarado Street sprouted tortillas.  We divided up the grocery list and that’s what he came back with.  I didn’t even know Alvarado Street made tortillas!  The best part is they are BIG and the serving size is for an entire tortilla.  I hate hate hate when products list the nutritional stats for half a friggin pita/tortilla/whatever.  I knew that dinner would be including one of these bad boys.

Steamed kale.  I’m in a massive kale phase right now.  Loving it every which way.

It was too stuffed, though, and wound up being a fork and knife kind of wrap.  I’m such a lady.

On the side (but a separate plate) I had an avocado salad.  To be honest, it wasn’t so much an avocado salad…more like guacamole with some kale and tomatoes mixed in.  Plus lots of lime juice.  Lime juice and avocado are meant to be together forever and always.

Post dinner Kyle and I watched our latest Netflix movie, Inception.  I have to say, Real Housewives obsession aside, I consider myself fairly intelligent; but trying to understand this movie was a real challenge.  We had to pause it multiple times to have brainstorming WTF sessions.  I have never felt so puzzled.  What happened to Leo’s simple film choices, a la Titanic?  You can be sure I’m staying far far away from Shutter Island

Log seitan

I really love seitan and because it’s so simple to make I really have no excuse for not doing so more often.  I spend so much cashola on the prepared kinds at Whole Foods.  That’s not okay.  Especially because I just dropped a thou$and smackers on flights to Spain and Paris (and there may be some car damage repairs in my poor little Civic’s future, too).  Contrary to what soon-to-be-revealed purchases may imply, I am not a baller, nor am I made of money.  Kyle and I are living on a single income, so it’s time to crack down on the budget.* 

So back to the seitan.

I know I’ve previously posted step-by-step tutorials, but as it turns out, there’s an even EASIER method that I just tested out.

Log Seitan

Ingredients:

Dry

  • 2 1/2 c vital wheat gluten
  • 1/2 c chickpea flour
  • 1/2 c nutritional yeast
  • 1 tsp paprika
  • 1 tbsp onion powder
  • 1 tsp garlic powder (I used garlic salt and omitted added salt)
  • 1 tsp salt (optional)

Wet

  • 1 3/4 c water (or veg broth)
  • 2 tbsp soy sauce
  • 2 tbsp Bragg’s

Instructions:

Separately combine and mix wet and dry ingreds.  Add both together.

Place seitan blob on a sprayed sheet of tin foil and roll it up like a tootsie roll.

Bake for 90 minutes at 325 degrees.

[From start to oven, this took under 5 minutes – does it get any easier than that?]

I realize the end result looks like nothing anyone should eat, but it smelled sooo good.

I was nervous about how hard it would be because it was very different from the seitan I usually make.  Luckily, it was still semi-sponge-like (but definitely a more dry form).

I didn’t mind that it wasn’t the chewy faux-meat consistency I am used to.  Although it did remind me of a fat salami roll as I was slicing it off in rounds. 

Flavor-wise it’s exactly like the seitan I’m used to.  AH-MAZE-ING.

I’m so used to keeping seitan in liquid to maintain it’s moisture so trying to keep this new, drier “meat” was such a foreign concept.  I stored it in the tin foil and in a tupperware because I was concerned it would dry out.

It has been a few days now and it’s still perfectly soft and delish.

Crash and burn

My second night shift came and went without incident.  It was pretty much a dream 12 hours.  I staggered my way to the parking garage and arrived home just before 8 am to pass the car off to my better half (as in, the half that doesn’t crash the car).  Oh, did I not mention my little accident?  Twitter followers may have read the news, but for those who aren’t in the loop, I suck at driving. 

Don’t worry, I’m being slightly dramatic (I’m fine).  The passenger side door, on the other hand, wasn’t so lucky.  I got into an accident with a wall.  Big picture – it’s not that big of a deal.  But I’m still annoyed with myself.  For being such an aggressive driver, it’s actually kinda a miracle I’ve never been pulled over, gotten a speeding ticket, or had any accidents before…so to taint my pristine record with such a ridiculous thing is frustrating to say the least.  I’m not saying I’d rather have been in an accident with another vehicle.  When it comes to auto accidents, the phrase “go big or go home” definitely doesn’t apply.  It’s just so stupid to hit a stationary object!

Have you ever been in a car accident?  Have you ever hit a wall/pole/non-moving object? 

So back to yesterday’s night shift.

Before leaving for work, I enjoyed a slice of vegan coconut “cheesecake”.

This is pear and coconut perfection.  And it just keeps getting better and better.  Who says you can’t have dessert for dinner?

I’m out of spinach so the non-green appearance was a change up.  I doubled up the frozen strawberries which required extra almond milk (so that it would blend), and in the end, it tasted like a strawberry milk shake.  No complaints on my end. 

For work I packed the following eats:

I steamed kale to bulk it up in the greens department, which was totally yummy with the masala flavors. 

If you want to know the truth, yes, bringing leftover Indian food to work was a daring move.  I’ll admit, I was nervous about how my body would deal, but I’m happy to report everything was A-ok.  And combined with the hearty bread, this meal kept my hunger at bay for the entire night. 

As per usual, I was peeing every 30 minutes on account of all the tea I was consuming.  And I’m proud to say, I had NO coffee last night and all but 2 mugs of tea were caffeine free.  Progress people. 

Consequently, my body was ready to crash when I got home.  So after I passed the car off to Kyle, I showered, PJed, put on my night vision goggles blackout mask and went to zzzzz.

I woke back up around 11, but still wasn’t ready to start the day.  With my fabulous sweatpants and sweatshirt, I looked like a home-less gray monster.  Isn’t it great that I could capture the essence of my morning in one photo?  Sweats.  Coffee.  Remote.  Are you there, Bravo?  It’s me, lazy.

Almost four seconds after the coffee was gone, I made some breakfast.

Cooked (and then chilled) oats, apple cinnamon granola, blueberries, and almond milk.  I need to start remembering to prep overnight oats because waiting for them to cook and then chill is torture.  I’m not nearly patient enough.  Obviously I enjoy warm oats, but lately I’ve been craving my grains cold. 

I’m now gearing up for my first ever yoga class, for which I’m a big ball of nervousanxiousexcited.  Can you believe I’ve still not used my YogaWorks gift certificate from my birthday?!  Such a pansy.  I just wish I hadn’t done 50 minutes of Jillian’s Banish Fat Boost Metabolism yesterday because my muscles are already burnin’.  Maybe yoga is the perfect remedy, though.
