Cheesy faux-mage spirals

Mmmmm… cheesy pasta! [Reminds me of the Friends episode where Joey is shooting a “mmmmm…noodle soup” commercial] I digress. Considering how sucky the brown rice tortillas were, I had zero expectations for this gluten free pasta.  I mean, they’re both made of rice. *I have since tried some of the tricks you guys left in the comments section of this post and there is a slight improvement in the texture, but I think I’ll just make chips out of the rest of the tortillas* Nice stats.  Nice start. They cooked like normal noodles.  And they… Read more >

Lacking wisdom and solids

Last week I was Kyle’s designated driver.  Happy hour with the guys?  Nope. Getting up before the sun is the opposite of a happy hour.  Especially when you are driving a grumpy patient who hasn’t eaten in several hours.  I didn’t want to rub in my ability to drink, so I held off on the coffee. After Kyle went into the procedure, I went to the family waiting area.  I had planned on walking to Starbucks, but the nurse came to get me a mere 15 minutes later.  Speedy surgeon much? Everything went perfectly well,… Read more >

Saucy giveaway

Last week our casa was on the FedEx circuit nearly every day.  Aside from Kyle’s latest set of course readers, most of the packages we got were fun, foodie filled items.  The one I was especially eager to try was from Lundberg Farms.  I’ve been a fan for a while (love their GF couscous and rice cakes).  Because they are a family owned and operated company, they’re able to ensure the quality of their products is top notch.    They recently partnered up with Stonehouse 27, a newer company that specializes in rich sauces, full… Read more >

Just like the bread

As far as I’m concerned, it’s officially Fall.    And in the spirit of the season, pumpkin puree is back on the menu.  Remember this bread recipe?  Well, how about a FODMAPS friendly oat bake version?   Pumpkin Banana Oat Bake (v, gf) oats water cinnamon coconut chia seeds I didn’t really measure the ingredients, just pulsed them in the magic bullet and gave the chia seeds some time to gel.    While the oat mix cooked in the microwave (I put it for 1.5 minutes because I was too lazy to wait for… Read more >

An “off” weekend

Between Kyle’s oral surgery and my G-ma’s hospital stay, my “days off” this week have been very medical.  🙁   It’s all good, but I’m sorta thinking getting back to work on Monday may be less stressful for me.  My heart is tired from worrying.  Thank goodness I had just received a package in the mail from Larabar.  New flavor alert!!  Review to come [hint: it’s very yummy].
