Pancake afternoons

I like to make more luxurious breakfasts for myself on the days that I work night shift.    I try and sleep in as long as possible and make breakfast fare later in the day as a means of tricking myself into thinking it’s early in the day (when it’s actually the afternoon).  That way it doesn’t seem to bizarre going to work in the evening.  It’s silly, but it’s what I do.    Today I made pancakes, which I topped in chocolate peanut sauce and maple syrup.   Thanks to Bob’s Red Mill and… Read more >

Soup Station

This was my vision for dinner last night. Turned out pretty much exactly how I pictured it! Bonus: it was way tastier than I could have ever hoped for! The butternut squash puree is outstanding enough to stand on it’s own…add in pasta, sautéed vegan sausage, and steamed kale…oh baby!   It’s definitely worth repeating.  The reason we kept the meal’s components separate was because I wanted kale and Kyle didn’t.  He was kale-d out from the previous night’s dinner (I, on the other hand, could eat leafy greens exclusively for weeks on end…).  So… Read more >

Mercado in May

On May 18th, our daily Starbucks morning meet-up was a bit delayed because Alene’s a bit slow.  She couldn’t figure out her iPad alarm.  Fail.     Eventually we all got coffee, food, and set off to Madrid’s Palacio Real.   I could seriously live the royal life. Mega (obnoxious) Monday

Oh my goodness, it’s only the DAY after Christmas and I’m already feeling completely bombarded with weight loss programs and get-in-shape tips for the new year.  The morning news is ridiculous.  Goals for January.  Jenny Craig ads.  Low fat leftover recipes.  Help!! Dear 2012, I will greet you in January with open arms, until then leave me alone. Merry Merry

Today I’m wearing my Santa socks.   [from my hospital’s president]   [from my family]   I brought my usual lunch pack yesterday, but I didn’t even eat any of it!! Ok, I did eat some of it.  Like breakfast. I had my oats, which were bulked up with puffed millet, dried cherries, chia seeds, and some of my home-made holiday spiced peanut butter leftovers.
