Four day weekend [part 1]

Is there anything better than a long weekend?  Yes.  And that’s a long weekend house dog sitting here. With sunny weather, golf course views, and a well stocked fridge, there’s no reason to venture further than the community pool.  Agreed? We drove down to San Juan Capistrano on Thursday evening and stayed through Monday.  Some friends joined us for part of the time.  We cooked.  We ate.  We drank.  We relaxed.  The weekend may as well be titled “blissful nothingness”.  It was perfect. When we first arrived, the priority was dinner.  That’s what 3 hours… Read more >

When oozing is good

Ooze is a funny word because it’s either a really bad thing (puss from a wound?) or a really really good thing (caramel and chocolate from a cupcake center). I hate to bring up puss before sharing these photos, but I think you’ll agree they are delicious enough to overcome the gross introduction. The samoa cupcakes from Sweet Freedom Bakery left my mouth in a state of yearning (for more). Look at that sweet gooey center! This is the best kind of oozing you can ever hope to come across. Thanks to google, I found… Read more >

Soup from Mom

My mom sent me this recipe she made recently because she thought it was worth sharing.  I agree; it sounds awesome.  Enjoy! Creamy Spring Asparagus Soup [vegan, gluten free, serves 4]   Serve this delightful spring soup with crusty bread. Ingredients: 1 T butter or olive oil 1 large leek, white and light green parts only, cleaned and cut into 1-inch pieces (I used 1 small onion, finely chopped) 3 cloves garlic, pressed 1 T fresh thyme 4 cups low-sodium vegetable broth 4 Yukon gold or red potatoes, cut into 1-inch pieces 1 large bunch… Read more >

Food Revolution Day

Kale!    This sunflower seeds dressing needs work, so I’m holding off on the recipe for now.  As a general rule, kale that’s been coated in any kind of nut/seed based dressing is delicious.  But I’m picky and I want to get things juuuust right. The other day on my lunch break I walked past this truck… How cool would it be if Jamie Oliver were working with the hospital’s cafeteria!  I won’t get my hopes up.  There was a sign on the door that said “do not interrupt, class in session”.  I want to… Read more >

Too much lunch

I’ve come to the conclusion that it’s impossible to make crock-pot meals look appetizing.    The night before photo looks like tomato and almond milk soup.  Gross.  The next morning photo looks like old crusty cornbread.  Double gross. What it actually had was: 1 cup corn meal 2 1/2 cups water 1 cup plain almond milk 10 cherry tomatoes (I punctured them with a knife before hand) 1 tbsp grain mustard 1 tsp fresh parsley, chopped pinch salt   Started at midnight…6 hours later…I was still asleep…but it was ready for Kyle.  That’s why half… Read more >
