How does your garden grow

Since I keep referencing them, I thought I’d show off the progress of my little babies.   In just a few weeks, they’ve gone from the photo above, to the photo below.   Makes me so happy!!   What I found so far is that they love sun, water, and coffee.  [We have very similar preferences]   Yes, you read that correctly.  My plants are coffee addicts.  My mom turned me onto it and they’ve shot up like little lightning bolts as a result.  I take any leftover coffee and water it down and they… Read more >

Rules for Oats

Remember last week when I was pancake crazy?  Well.  I’m back in an oatmeal rut.    Almond milk, cinnamon, bananas, peanut butter & maple syrup.    Rules for oatmeal (slash life): No playing favorites. Editing is not necessary (and often discouraged). Go big or go home. The more the merrier. You get the idea right?  I like lots of toppings.  And I like them all together.   Of course I can’t forget to mention the principles of frugality: Waste not, want not. Never leave a man behind. A penny saved, is a penny earned.  … Read more >

Working and slow cooking

Still working.  Still eating.    Breakfast: Oatmeal with the works. Lunch: Chop Salad [see below]. Dessert: Ghirardelli’s dark chocolate squares (one with caramel filling, one with raspberry filling) and candied ginger. Snacks: home-made carrot cornbread, salty nuts, Cocomo Joe green joebar. I made a co-worker try the cocomo joebar because she was talking all this trash earlier in the day about how hummus was gross (but she’d never tried it) and I was annoyed.  So when she walked in the break room in the afternoon and I had just opened my green bar, of course… Read more >

I have news

I’ve been keeping a secret from you guys. For months and months and months I’ve been working on a FODMAPs free cookbook that is vegan friendly. You see, since discovering how my gut is affected by FODMAPs back last year, I immediately knew I had to share this knowledge.  But the more and more research I did, the more I found meat-centric meal plans that seriously lacked plant based foods.  As you all well know, I am a veggie lover.  So I set to work finding a way to make the FODMAPs lifestyle work for… Read more >

Roots

I’m kinda embarrassed to admit this, but one of the main reasons I’ve avoided roasting beets is because they seem so messy!  Dyed hands.  Dyed cutting board.  Not appealing. I am so dumb! There was nothing remotely difficult about this.  The clean up was just as easy as the prep.  Take my word for it.  Ok?  Cool. Roasted root veggies du jour: butternut squash, beet, sweet potato, celeriac (?)   Pre-heat oven to 400. Chop veggies. Coat in olive oil and fresh herbs (I used rosemary, thyme, & sage <— from my garden!), plus salt… Read more >
