Olive Tasting

Last month, Musco Family Olive Co. offered to send me a sampler package of their delicious new olives, including: Fresh Cured Olives – hand-picked, then cured immediately to retain their firm texture and natural color variations. Reduced Salt Olives – large, black pitted olives with 25% less salt and pimiento stuffed manzanillas with 75% less salt than their traditional counterparts! Tomato Quinoa Soup

This one can go a few ways…   With basil on top.  Or parmesan.  Or cornbread.  Or neither.  Or all.   The soup is based on Ashley’s simple tomato soup.  Only mine’s vegan.  And I added in quinoa.   The basic ingredients were: 1 28 oz. can diced tomatoes, 1 28 oz. can fire roasted tomatoes, and 1 cup plain almond milk.    To start I added some olive oil (enough to coat the bottom of the pot), garlic nuggets (Garlic Gold), onion powder, dried parsley, oregano, salt & pepper to the crock-pot and started… Read more >

Yoga Wednesday

As per my previous few weeks, my Wednesday was more snack-y than meal-y in the AM.   In addition to toast with Earth Balance and cantaloupe, I had home-made candied walnuts and a few dried pineapple rings.  Not exactly a normal breakfast but it got the job done.  So at noon I headed out to YogaWorks and did my thing.  And by the time I got home I wasn’t starving, but I was definitely hungry.   Roasted butternut squash, quinoa and a Sunshine veggie burger.  Typical Elise plate – quick and covering all the main… Read more >

Vegetarian snack ideas

Now that Kyle’s bringing his lunch to work – and he’s vegetarian – I’ve been trying to get creative with snack ideas. While I’m content eating the same things day after day, he’s not. Guess what he’s finally sick of?  Clif bars.  I never ever thought the day would come (check out the photo below for a reminder of his love affair). Parties & Dates

After a long work week, Kyle and I soaked up the weekend like two sponges.  And of course, I’m only just now getting around to blogging about it.  So pathetic.  But let’s just pretend this is timely and the weekend was yesterday, okay?
