Sweet Zucchini

  Zucchini Mini Loaves [vegan, gluten free] Ingredients: 1 zucchini, shredded 1 cup oat flour 1/2 cup almond flour 2 tbsp ground flax 1 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 1/3 cup Suzanne’s Specialties brown rice syrup “honey” (or maple syrup) 1/4 cup oil (canola or coconut) optional: shredded coconut, carob chips, walnuts, etc. Directions: Pre-heat oven to 375. Sweaty Selections

This weekend was a (partial) work weekend.  And it was INSANELY hot.  Fall is nowhere in sight and while I usually love 90 degree temps, my hormones are not on the same page.  At all.  Our AC isn’t doing much of anything and so Kyle and I spent a large part of the weekend bitching about how uncomfortable and sweaty we were.  So productive. I just wanted salad dressing

I feel like I’m clinging onto summer with this breakfast.  Home-made banana pancakes with strawberries and peaches.  This was my first sweet breakfast in a long time.   I finally finished off that massive batch of vegan gluten free pancakes that I made a while back, so I had to do actual work in the morning for these.  The effort was worth it, but I wish I’d had the energy to make a huge batch so there were leftovers.  Part one of lunch was half a sweet potato with tofu scramble.   I’ve been on… Read more >

Asian Hummus Tempeh Stir-fry

Sometimes when I work night shifts, I forget to make dinner for Kyle.  I usually realize it around 5 pm – right about the time I should be packing up my stuff and heading to the hospital.  This isn’t a tragedy by any means, he’s a great cook, and could certainly make a good meal for himself.  But I like making things easy for him when he gets home from a long work day (and hideous commute).  Plus, it makes me happy (and I know he loves it).    Doesn’t this look gourmet?  I’m sure… Read more >
