An ode to the best fall produce of all…apples… Since discovering apples were a FODMAPs no-no, I’ve been eating them so infrequently it hurts my heart. My stomach is happier, but my taste buds are mourning the loss. I’ve discovered the trick to keep me motivated in the kitchen. New and different ingredients. Specifically produce. This acorn squash was an impulse buy last week and I was so excited to do something fun with it. I mean, I will happily eat any and every squash plain. Simply roasted in coconut oil or dipped in nut butter or drizzled with olive oil, salt and pepper. It doesn’t take much. My memory is gone. Apparently this pregnancy brain fog thing is the real deal. I forgot our garage code last month and had to call Kyle to remind me what it was (I have no idea how my mind blanked out about that since I punch in the four numbers so regularly). There’s not much that’s changed in my work life. I just stopped taking pics of the food I pack to take to the hospital because it’s not interesting to me. But it’s the same old same old. With maybe 15% more food. Because my appetite is hard to predict. To jazz up this particular breakfast oatmeal, I added one mashed banana and some of the Halloween Pumpkin cookies to the mix.
