Due Date

I waited (and waited and waited) to write this post…all in the hopes that I wouldn’t have to. Alas, here I am on the official due date of my son, not in labor. Egg and tofu wrap

At first I thought I just wanted a simple breakfast wrap. Spinach, fried egg, Rudi’s GF tortilla. But it looked a little sad (despite the absolutely perfect fried egg), so I took a fridge survey, and decided to make a mustard tofu salad too. It had 1/4 block of extra firm tofu, dijon mustard, honey mustard, plain almond milk, and lemon juice. Baking with dried fruit

I made mini banana bread bakes with dried fruit.  Would you ever have thought dried fruit could get plump and juicy?  Well it does! No recipes to share here because I was just throwing thing into the glass bowl all willy-nilly, but I made two of them.  The first had dried blueberries and the second had goji berries.
