Checklist fun

Who doesn’t love a nice organized to-do list? This past week was a little different because Kyle was out of town a few nights working.  But he came home to sleep a little bit in between (night shifts).  And he wanted me to pack all his food so he wouldn’t eat crap on the road.  Hence the need for a very mapped out menu.  I can’t stay organized without it all written out nowadays.  My head is too full of other crap (like the tune to head shoulders knees and toes…make it go away!). Breakfast… Read more >

Sriracha brussels & quinoa

There’s nothing I love more than being gifted food.  I’m a simple girl foodie. Seriously.  To all the people reading this who plan on buying me presents in the future, take note.  [Crickets] My mother in law actually traveled with Brussels sprouts in her luggage.  And then left them with me. Ummm…I’m not sure who’s the bigger weirdo in this scenario…her for bringing produce as a carry-on, or me for being over the moon about it…close call. I think Brussels sprouts are delish.  I think people who don’t like them (ahem, Kyle) are close-minded losers… Read more >

Eggs as the feature

The last few posts have had more elaborate (for me) meals, so I figured I’d throw a few of my stand by quickies your way.  I don’t usually take photos of the boring repetitive meals because they’re not that exciting.  But I don’t cook fun things all the time and it’s only fair to show my lame side (lest you think I’m super homemaker hippie).  Eggs.  The cheap protein that can be the star of any meal in a minute.  Basic Veggie Egg Fried Rice [vegetarian, gluten free, FODMAPs friendly] Ingredients: 2 tbsp garlic infused… Read more >

A FODMAPs friendly “what I ate” day

Breakfast Udi’s mighty bagel with organic peanut butter and a fried egg.  I had the second half of the bagel a couple hours later.  Also with PB PB. I’m seriously obsessed with these bagels.  They are so hearty and full of seeds and whole grains, you’d never know they are wheat and gluten free.  Definitely the best GF baked good I’ve tried so far.  What sets it apart though, is the fact that it actually tastes like a bagel.  Not eggy bread.  Not nutrient devoid buns.  Not cardboard crap.  Real ingredients!  I can SEE the… Read more >

Elise Lately [V]

My garden is officially started.  Meaning it’s in soil and I’m waiting (notsopatiently) for the yield. I planted basil and parsley plants.  More basil from seeds.  And (the above) spinach, chard, and kale seeds.  I also have a (sweet 100) tomato plant.  And our lime tree (which made the move from Santa Monica with us).  Yup, I moved with a tree. I’m so excited to get some free produce this summer! Kyle and I finally made it to the Davis Farmer’s Market!  Geez.  Took us long enough!  There are SO many things I can’t… Read more >
