Tempeh & Potato Pesto Salad
Cool or warm, this is an easy tasty dish. Easy being the key thing if you’d rather be soaking up the summer rays than doing things in the kitchen. Who wouldn’t? I’ve said this lots before – I’m not a tempeh lover. I like it fine, and when restaurants prepare it (correctly) it’s awesome. But yeah. It’s not my number one. That might all change though.
