Losing sleep and links

No Bake Coconut Balls

No-Bake Coconut Balls [vegan, gluten free, FODMAPs friendly] Ingredients: 2 cup shredded unsweetened coconut 8 dates, pitted 3 tbsp brown rice syrup 1 tbsp water 1/8 tsp salt Directions: Pulse coconut and dates in a food processor.  Add in syrup and salt and continue to pulse.  Add water if needed (it will depend on the freshness of your dates).  I needed 1 tbsp water for the dough to stick.  Roll into balls.  Store in fridge or freezer.  These were so simple and so good.  I plan on making different versions in the future with peanut… Read more >

Baked Spaghetti

  Helloooooo lazy.   This is pretty much as good as it gets for a quick week day meal. Allow me to demonstrate.   Collect ingredients.  Layer.  Bake.  So easy.  And definitely delicious.    I made this both gluten free and lactose free so Kyle and I could share it.  It’s much easier that way. Australian surprise weekend

My sister finally got to meet her nephew!!! Even though I knew she was coming home, I couldn’t tell anyone because it was a surprise for her best friend’s bachelorette party.  My immediate family knew, but I didn’t even want to tell any of my friends, for fear facebook postings would give her away.  The whole thing went off without a hitch and my sister’s bestie was totally shocked when she showed up in Napa.  And bonus for me, I got to see her for the first time in over a year! Banana whatchamacallit
