  Coconut Cranberry Banana Bread  [gluten free, yields 2 mini loaves] Ingredients: 1 cup oat flour 1/2 cup coconut flour 4 tbsp sugar 1 1/2 tsp baking powder pinch of salt 1 banana, mashed 1 cup vanilla greek yogurt 2 eggs 1/3 cup fresh cranberries 1 tbsp shredded unsweetened coconut (for topping) Directions: Pre-heat oven to 350 degrees F. The weekly menu

I am always soooo close to catching up and then I just don’t.  Okay.  Last weekend.  Hmmm…I’ve forgotten it completely…let me look at photos to refresh my memory.  Oh yeah!  Saturday we had swimming and then went to Farmer’s Market, per usual. I’ll keep this short and sweet since the real eating is going down tomorrow.  We had our second Thanksgiving this past weekend and it just made me even more appreciative of the life we have here in Davis.  Our friends are fun and the kiddie chaos was all kinds of cute.  Plus, the food was legit. Father’s Day weekend

How precious are these moments. We went to the Windsor hot air balloon festival this weekend and opted to stay at the vineyard on Saturday night so we’d be close for the 5 am start time.  Obviously we were nowhere near that early to arrive (thank goodness!!) but we definitely didn’t do proper research because by the time we got there, it was kinda done-zo.  Still we had a (chilly) breakfast picnic with our friends and that made it a special enough start to Father’s Day.
