A weekend of PACKing it in

I just found out it’s a holiday weekend.  Who knew?  Hospitals obviously don’t shut down and so I work Monday, but I still made the most of this weekend.

The PACKERS win was clearly a highlight.

Who would have known a kid from Chico would be the next big thing?!?  Love it.

Congrats Aaron.  🙂

We also celebrated a friend’s birthday with a night on the town.

Dinner was at the ridiculously expen$ive Boa Steakhouse.  Seriously.  So.  Expensive.  I was nervous about the vegan options on the menu after calling beforehand and discovering it was quite limited.  So I ate a mini-dinner before we headed out.  To my delight, the waiter helped me navigate the menu and I ended up with a veganized brown sugar glazed roasted carrot dish, roasted butternut squash, and bamboo steamed market veggies.  The plate was not only beautifully presented, but also piled high (love it!!).  I managed to PACK in my fair share of fiber.  You better believe I toted my leftovers around the bars afterwards.  😉

On Sunday Kyle and I PACKED things up to head down south to San Clemente.

    I taught my niece how to use a camera, and 5 days later, she was still at it!! Then she was taught it had a video, and she went crazy!

    i am a horrible friend.

    i just caught up on like TEN posts. yes, TEN. but i read them all, and they made me miss you. they also made me want to make squash pattycakes, buy some braggs aminos even though i am so scared of that bottle, make an easy frittata, go drinking with you (again) and fly to LA so i can enjoy temperatures in the 70s instead of the six additional inches of snow we just received. i would like that all.

    the kind of pita bread i am really into right now is at whole foods and is called turlock pita bread. its whole wheat, fluffy and delish. even after being stored int he freezer.

    even as an aunt i can already tell my kids will be wearing all of costco’s seasonal wear. these girls have multiple costume changes a day and my wallet wont be doing anything designer with that rate.
