Award winning sandwich

I always feel a little weird about these blog award things.  I’m not saying I get them all the time, but I do get nominated every so often.  And I like it.  It feels good to be recognized for something I put my heart and soul into day after day.  That said, I feel pretty odd showing off said awards in a post.  I mean.  You guys are already readers.  You come to the site by choice, so presumably you enjoy reading what I write or cook or whatever.  I really doubt there are people who are popping in right now after googling the terms “award winning blog”.  I think google would lead those people elsewhere anyway (I think Charlie Sheen now dominates any search with the word winning).  So isn’t it a little bit unnecessary (read: self indulgent) for me to tell you all why I’m awesome and why you should be reading.  That’s what I thought.  So glad we’re on the same page here [in my head].

To anyone (all four of you) who has ever nominated me for a blog award, (a) thank you!! and (b) sorry I didn’t acknowledge it here.  It’s definitely not because I don’t appreciate it.  I’m just awkward with compliments and self praise. 

Ok.  Moving on.

How do you feel about burgers?  Pretty good right?  [<— award winning transition right there]  Me too.

Especially falafel burgers.

I bought this falafel mix a hundred and fifty five years ago and just recently decided to do something with it.  And by “something” I mean making burgers.  I am sure there were detailed instructions on the back of the box, but I just added water until it had reached a thick and patty-shape-able consistency.

Then I threw it on the skillet and waited a bit.  Once it was golden and crispy on the bottom I flipped it and let the other side have it’s glory.

Then I made a beautiful sandwich.

Complete with avocado, hummus, BBQ sauce, and greens.

Award winning, for sure.

This was the fastest thing to make ever.  Yes, I cheated a bit because the mix was pre-made and all I had to do was add water, but whatever.  I’m sure any mix will work this way.  Our local co-op even has falafel mix in the bulk bins section, so I plan on doing this often in the future.  Kyle enjoyed the burgers a ton, too, so this is definitely a winner all around.

    And I made Choosing Raw’s chickpea, pumpkin seed & quinoa burgers last night, you just blend everything together and ended up looking JUST like that. Really tasty, I highly recommend them!

    I’ve been wondering and finally decided to ask…how do you always seem to have these perfectly ripe avocados? The ones I buy have like a 5 minute window between when they’re rock hard and mush.

    I feel the same way about blog awards! They’re always kind of awkward. But, you definitely deserve them!

    And I haven’t had falafel in sooo long. I’m usually turned off by the boxed mixes but, if it has your seal of approval, it must be good!

    Nothing wrong with a store bought falafel mix, as long as the ingredients are allright. I buy mine from time to time in the vegan store and just have a look that its all natural and no more than five ingredients – healthy quick and easy way to make a sandwich – and yours looks soooo delish! (Love the avocado combination)

    fodmaps is so tricky, its definitely a struggle to sort out…just keep on sampling and noting how your gut reacts to various things and various combos.

    i am so so luck to be in CA because i think its a CA thing. im guessing you arent from california, but if you are, the trick is to buy the organic and local ones. they are most likely to have been on the tree longest prior to being shipped to the store. farmers markets are also great places to get them.
