Barely Bake Chia Oaties

I decided to make up a recipe today.  Because my baking skills aren’t as amazing as I’d like (I’m certainly no pastry chef), I usually follow recipes rather diligently.  But tonight, for some reason, I decided to wing it.

I suppose I was inspired by the massive shipment I received the day before from NuNaturals

After they discovered my vegan cornbread recipe (that was perfectly sweet thanks to NuNaturals Stevia Baking Blend), they asked if they could share my recipe with other “foodie enthusiasts.”   As if that wasn’t thrilling enough, they offered to send me more products in exchange for the recipe.  Umm, yes please!?!

They really hooked it up!

They included some new products that I’ve never seen before, along with several of my other faves (the Vanilla Stevia extract is insanely delicious in coffee)…add a little froth and voila – caffeine heaven.

So, since I had all these yummy new things to bake with, I decided to make a oat bar of sorts with some things I had on hand.

The key components included the remainder of my home-made soynut butter

NuNaturals Stevia Baking Blend…

And Greens+ chia seed “egg”…

All I did was mix 1 scoop of chia seeds with 8 ounces of light silk soymilk (you can use water if you want) and let them soak for 10 minutes.

Hungry Hungry Hippie’s Barely Bake Chia Oat Bars

  • 5 tbsp (approx. 1/3 cup) home-made soynut butter 
  • Greens+ Chia seed “egg” (1 scoop chia seeds with 8 oz. water)
  • 1/2 cup Silk soy milk light
  • 2 dried pears (chopped)
  • 1/2 cup dried cranberries
  • 1/2 cup rolled oats
  • 1/2 cup NuNaturals Stevia Baking Blend
  • 1 tsp cinnamon (or more…)
  • 1 tsp salt (or less…)
  • 1 tsp Xanthan gum

Add together everything but the dried fruit and xanthan gum…

Mix it all up…

At this point it should stick together (and slightly resemble Jaba the Hut)…so then spread into a pan (I used a square 8×8 pan and it was ~1-2 cm thick)…

I let it sit for a few minutes to meld together, and then I put it in the oven (on a super low setting, like 200) for 5 minutes.

Yes.  FIVE minutes.  That’s it.  I probably could have let it set on it’s own, but I was impatient.  After it cooled I flipped it to expose the bottom to air.

I used saran wrap to do the transfer (just put saran wrap on top and flip it and then put it back in the pan with the saran wrap on the bottom).

I stored it in the fridge overnight and the next day I cut them into 8 bar shaped pieces and tupperwared them up.

Kyle even tried one and liked it, so it’s not just for hippies ;)   Thanks to NuNaturals for the goodies!  I love experimenting in the kitchen…and it’s even nicer when it comes out a success!

This looks like such a simple, healthy energy bar. I finally got myself some chia seeds, so I will be making these soon. :)

Annnnd there goes my night of studying to make Chh-yeah Oatie Bars… I am impatient though and will not wait for them that long in the fridge! :) But since i work every other day this week, and i was looking for a new bar to try out for my lunches; this sounds like the perfect idea!

I love that it’s approved by a non-hippie. If I made these for my fam, I’d have to change the name to just granola bars. Between barley and chia, they’d probably think I was speaking Spanish.

OMG…I am SO jealous. I have always wanted to try NuNaturals Stevia but can’t because it is sooooooo expensive. How lucky are you?! That is awesome!

I’m a big fan of NuNaturals. I did a little baking experiment a few months ago using several different sweeteners for the same recipe, and NuNaturals was my far my fave!

That recipe looks SO good! Does the Nunaturals Stevia taste better than regular Stevia? I find that Stevia has a weird taste when I add it to my oats, HOWEVER, it is in my protein powder and I love that. Does the taste vary with brand?

they look awesome and i just got a huge nu nat shipment TODAY. and saw your submission as well as my own LOL in the recipe stack. These creations of yours are reminiscent of my no bake protein PB bars…that i have been making with or without coconut oil. delete this comment if you hate the link drop, sorry :)

you can sub the nu nat for the coconut flakes or the maple or whatever.

Hi, random reader, just wanted to comment and say that yes, NuNaturals (and ONLY NuNaturals!) is definitely addictive. It is the best stevia extract for sure…and I am way too heavy handed with it!

I’m so timid when it comes to experimenting in the kitchen. But I think it takes a great deal of courage and an optimistic atitude that even if something doesn’t work out, you can fix it! Looks like you’ve got it! :)
