Breaking the feast

The building blocks for a delicious work lunch…

Avocado and tofu.

Since I make my work lunches the night before, I am usually in a rush to get to bed.  Thus, tofu prep tends to be on the minimalist side.  I like plain ‘fu so I don’t really care much.

All I did was cut some of the block into cubes, spritz it with Bragg’s and microwave it in a glass bowl with a CoverMate cover.  After 45 seconds, I flipped them around a bit, and popped them back in for another 45 seconds.  It’s not brain surgery…and it turned out perfect.

This salad beast had spinach, apples, cubed tofu, and avocado with Bragg’s liquid aminos as dressing.

The rest of my lunch included carrots, Sabra hummus, and two apples.

When I got home from work, I was in the mood to crash.  So I did.  I am NOT a  napper, so clearly my body’s immune system is having trouble coping.  After I woke up I felt so anxious.  I wanted to do something, anything, active because I felt like such a blob.  I don’t mind listening to my body when I’m sick, but I do mind feeling gross as a result.  Frustration!

Random question: when you don’t work out for a few days in a row, do your muscles feel insanely tight?  I experience this all. the. time.  As much as I try to convince myself that this “feeling” is all in my head, I’m not so sure it is.  I love love love how my muscles feel just after a run, and sometimes I think it’s the absence of that, rather than the presence of any real physiological change, that I’m noticing.  But I swear, my quads are like rocks.  Regardless of how much I stretch, it’s not until after I work out that they loosen up and feel MUCH better.  Do I sound crazy?

For dinner I did a little AM in the PM.  While my butternut chunks baked in the oven, I set to work on the other components to the meal.

Starting with taters…

I pre-cooked five red potatoes before adding them to the pan, so they were almost done and all they needed was a bit of browning.  A few attempts at pan flipping later…

Rustic, no?

I also mashed up 1.5 avocados… shout out to my fellow ‘cado freaks. 😀

Once the butternut squash was done, I served it all up.

Squash, potato hash, and avo on top.

Let’s not forget the ketchup!

At the last minute I decided it wouldn’t truly be AM in the PM without eggs…

Fry two, let the sun shine.  That’s diner lingo for two sunny-side-up eggs.

Nothing like breaking the fast feast at 8 pm.

What’s better after breakfast than dessert?

I can totally relate on the tight leg issue. I tend to feel WORSE (tight) when I do nothing as opposed to my workout days. Weird.
Your eats look delish as always. I love plain ‘fu too 🙂

Haha, thanks for the shout out!! Avocadoes are the best…I actually have some b-nut squash in the fridge right now so I might need an avocado to go along with it now…

Love that you are putting avocado on everything! I wish we had a better selection of them here! They tend to be hard, small, and cost and arm and a leg!

Love combining squash with avocado!! YUM!

I feel tight after not working out too. I actually crave the feeling of my muscles getting hot and lose from exercise, but I do know it is good to get rest too.

Your condition is what is known as Brother N8ture syndrome. I literally experience that feeling at least twice a month. Know that it is completely normal and can be remedied with a few high knees! 😀 Works for me? You make eggs look good… I haven’t said that in awhile!
