Carbs with a side of carbs

More pasta?  What the?

Let me explain.  Kyle likes noodles.  And he really likes noodles with tomato sauce.  I think they’re okay, but Italian is really not my thing.  I make it every so often to appease him (also it’s probably the quickest and easiest meal to make).  Boil water.  Congrats, your a chef!

So yeah, here’s how I cheat and make him think I’ve turned water into wine ground beef into hearty vegan sauce. 

When the noodles are almost done but still al dente, I drain the water and add two frozen veggie burgers.  The brand doesn’t really matter, but in this case I used SoL Cuisine’s burgers.  As the burgers thaw, they break up into meat-like consistency.  When they’re nearly done I add the sauce and mix everything together.

Kyle was dead sure that I had served him meat.  He really didn’t believe that it was vegan until I ate it too.

Even though I think it’s kinda ridiculous to have a side of carbs with a meal that’s already 90% carbs, I knew he’d ask for it…so I made him garlic bread anyway.

I am constantly trying to explain macronutrients to him to make sure his meals have a semi-balanced amount of protein, fat, and carbohydrates, but sometimes it’s just a lost cause.

Bread + Earth Balance + Garlic Gold nuggets + Italian seasonings + 450 degrees.

Either watch it until it looks golden or keep your nose to the air, because it can go from bronze to charred in 35 seconds.

    Haha I never understood why people want bread with their pasta! Even since I was little! I mean, I never turned down the garlic bread… but I just didn’t get it.

    What kind of noodles did you use? I ate a lot of gluten-free pastas when I was just diagnosed w/ gluten intolerance, I think it was trying to hold onto a lost cause or something… Now I almost never crave and of the GF subsitutes – unless I’m eating out/walking past a gf/vegan bakery of course!

    they have a very extensive GF line, including corn and rice pastas. just make sure you buy the GF ones, because i accidentally bought their oat pasta last time at the store thinking it was made with oats (without looking at the label – stupid elise) and it has both oats AND wheat!

    You gotta indulge a little. This doesn’t seem as carby as the mac n’ cheese grilled cheeses I’ve seen on the food network. Whew, now that’s extreme carbocidal.

    Haha carbs with a side of carbs, when I was a kid that was my diet every.single.day. Now, I’ve changed that a lot. Carbs are definitely delicious though. I think I prefer dipping bread in pasta sauce, than the actual pasta in sauce though. Maybe I’m just weird.

    You will never have to justify eating a carb heavy meal with a side of carbs to me – learned in Nutrition that carbs are fuel so we should enjoy them. Plus how can you go wrong with noodles & garlic bread 😉

    Love double carb meals once in a while! I can’t eat spaghetti without garlic bread either. I like the Nate’s brand “meat balls” vegan & so good.
