Amy's

Gluten free vegan pizza showdown

On the left is Amy’s dairy free cheeze pizza with a rice crust.  On the right is Udi’s gluten free crust with tomato paste, arugula pesto, and Daiya mozzarella vegan cheese. I tried the Amy’s pizza a couple of weeks ago after an exhausting day.  I was in a bad mood and didn’t want to put any effort into cooking.  And I probably should have looked at the meal’s ingreds closer.   Pros: It’s dairy free and gluten free.  And takes no time to bake.  I made it in the oven following the directions… Read more >

Touring Davis

As I alluded in the last post, we had a road trip planned for the next day in Nor Cal.  Boy oh boy are we pushing our luck with all these long car rides with an infant! But this is what he does most of the time so we are really lucky (so far).  Fingers crossed. I packed lots of food for us so we could hit the road early (basically right after we had both showered and I’d breastfed P).   Kyle and I both had similar breakfasts, but his was sandwiched between some… Read more >

On the go breakfasts

His and hers differ minimally on the weekends, but on week days I make him portable savory fare.  He often eats in the car on the way to work.  His faves include mini breakfast quiches and grits.  And when I’m lazy, I’ll give him an Amy’s breakfast burrito.  Unfortunately, Amy’s burritos have gotten to be too expensive for our new budget.  Convenient, yes.  Pricey, yes yes.  So we said adios to the luxury of prepared frozen health food and hello to the home-made alternative. Tofu scramble + whole wheat tortilla + cheese = Kyle’s new… Read more >

Jazzing up soup

[Somehow this post got erased but I just recovered it (tech skills?) – so it’s from nearly a month ago] Good on their own, simple soups like the above are also excellent recipe starting points. Remember this cheater soup?  Or this one?  Or this one?  It’s kinda the same process.  Imagine’s soups are great for this blank canvas kind of cooking.  Trader Joe’s makes similar products.  And Amy’s has some good ones too. I made this meal my own by adding fried tempeh. Tomato for him, butternut for me. I added peas and a dash… Read more >

MoFo recap

Since I returned to eating eggs…a while ago…I no longer consider myself vegan.  I’m basically a dairy free vegetarian.  But that doesn’t mean I don’t like vegan food.  I love it actually.  I eat it often.  And seeing as October was vegan mofo, I decided to recap some of my daily vegan eats.  October 1: Spaghetti Squash with Marinara & Tofurky   October 2: Quinoa & Seitan with Red Almond Sauce   October 3: Mexican Layered Casserole October 4: Blue Plate’s vegan white bean soup and gardenburger salad October 5: Pumpkin Cheesecake Pie   October… Read more >
