Week ‘o eats

The whole shebang of last week in one post.  Here goes. Breakfast on Monday was the last of this savory bread and fried eggs.   Breakfast on Tuesday was out – I had a savory crepe with hash browns at Crepeville. Because Crepeville’s portions are awesomely massive I had leftovers for breakfast on Wednesday.  Which I paired with two fried eggs. Thursday I made steel cut oats in the rice cooker (the crock pot was already occupied) for our whole family.  I topped mine with a bunch of non-nut things (aka seeds galore) – including… Read more >

Cornbread salads

I made this cornbread for one purpose.  Salad croutons. All the cornbread panzanellas have been floating around in my mind lately.    So I had to do one too.   So I did.  And it was good.  And so I had the same thing for my next meal.  And the next.  And the next.  And the cornbread was gone in 48 hours and 4 meals.  The end.     This recipe is not meant to be eaten as cornbread.  It’s purely a salad accompaniment.   Crispy Cornbread (for salad croutons) [vegan, gluten free, dairy free] Ingredients:… Read more >

Blueberry Chocolate Chia Pudding

Since summer is berry season, I’ve been unable to hold back when I see cartons of them for super cheap at the farmer’s market.  It’s getting to be a problem.  But honestly, they’re so bright and beautiful!  So I have been freezing lots of them so I can have fresh organic summer berries year round.  Even though I’m front loading the cost now, I’m pretty sure it’ll end up being cheaper than buying frozen organic fruit in winter.  Plus this fruit is at it’s height of ripeness.  You can’t get that in the freezer aisle…. Caramel studded oatmeal blondie bars

Uhhh yeah, long name, I know.    But I actually held back because they could have been called a million other things…like lovely gooey bites…or gluten free breakfast squares…or deliciously sweet snack bars…you get the idea, right?    I have a lot of photos of P man-handling these candies because they’ve been on the counter (hashtag dangerous) for a while now.  He loves playing with the bag because it makes noise and his pudgy little fingers can perfectly grasp and shake it.    And yet, we all know how bad terrible of an idea it… Read more >

Backlogged days

Monday Monday Monday. In nursing, there isn’t really the same stigma for the various days of the week because every day is (potentially) a work day. Fridays don’t mean the next two days are off. Wednesdays aren’t a half way mark. And Mondays aren’t the first day back after a break. So why do Mondays still have that baggage for me? Probably because spending the weekends with both my boys are so awesome. And I hate that it has to end. I also usually do grocery shopping on Mondays and I truly have come to… Read more >
