Sweet peachy cornbread

I came up with this on the fly last week after realizing too late in the day that we were out of plain almond milk and very low on cornmeal.  Necessity is the mother of invention though…orrrrr…in Elise terms…being cheap and desperate will lead you down different paths than your ideal route.   But I made it work, and I wrote down what I used in case it was decent and (shocker) it may be my favorite cornbread recipe ever.   Sweet Peach Cornbread [gluten free, soy free, nut free] Ingredients: 3/4 cup corn meal 1 1/2… Read more >

Chocolate Cherry quick bread

I know it’s all like pumpkin this and pumpkin that and pumpkin all. the. things. up in blogland, but I actually have a non-pumpkin quick bread recipe today.   For the record, I will be making up for lost time and squashing my face away for the next 90 days so don’t you worry about the absence of gourds this first week of fall. We all know October is the best month ever.  It’s pink, it’s my birthday, it’s football, it’s comfort food.  It’s everything good.  So we will get there soon, promise. In… Read more >

Third year cookies

I rarely keep more than one dessert in the house because…well…because it’s dangerous.  Ok, I ALWAYS have dark chocolate, but that doesn’t count because that’s just common sense a pantry staple.   Anyway, despite the fact that I still had a slice of GF vegan chocolate cake left from our weekend in SF, I was in the mood to make some cookies yesterday.  For Kyle (that’s what I told myself).  Because he could use a little fattening up.  Of course my baked treats are usually on the healthier end of the spectrum, so fattening… Read more >

Bananaberry Crumble bread

Can you believe I made this a while ago but only just got around to trying it? I know that sounds insane but it was purely due to the move.  I hated the idea of blueberries and greek yogurt going to waste, so I decided to bake with it.  Transporting a couple of frozen loaves of bread is way easier than berries and yogurt individually. It may seem like I’m obnoxiously frugal cheap, but organic blueberries are not inexpensive.  Plus I don’t like the idea of waste.  I’m the girl that takes home the last… Read more >

Sweet & Savory Breakfast Pie

Making breakfast dishes in casserole pans is my new favorite hobby.  It makes the morning run so smoothly when there’s already food prepared.  All you have to do is cut out a piece and (re)heat it in the microwave.  So I can shower and Kyle can serve himself breakfast one-handed while holding P.  Don’t get me wrong, Kyle’s certainly capable of cooking things for himself.  It’s just nice to use teamwork when it comes to our party of three operations.  We take turns sleeping, exercising, working…so why not cooking and eating.  It would be… Read more >
