A rough week

Unlike last week’s meal plan, I kept this one a bit more flexible due to the uncertainty (and chaos) on the calendar.  In addition to my usual work schedule, I had a four hour class (for work) and maternity unit tour.  That meant I’d be at the hospital all five days of the week.  I can’t get away from the place!  Kyle was also busy with work – presentations, dinner meetings, etc.  Accordingly, I planned out dinners for all five week days, but didn’t assign definite nights for most of them.  Instead I just figured… Read more >

Holiday leftover solution

I realize certain things are not meant to be photographed.   Stew is one of those things.  [Same goes for certain angles of my pregnant body.  And the spider web situation we have going on in the front yard.  And Kyle’s closet.  No seriously, it’s out of control.]   Maybe Ansel Adams could make this look tasty, but I am working with an iPhone at 5 am in a poorly lit kitchen.  Natural sunlight, what??  Just trust me.  It’s good.   Leftover Crock-Pot Stew [vegan, gluten free] Ingredients: 2 tbsp olive oil 1/2 yellow onion… Read more >

So banana muffins it was! I topped half with nuts (for Kyle) and the rest were nut-free (for me).   Sadly I didn’t measure or write down anything, so… Read more >

Mis-schedule

I’ve been very uninspired lately.  In the kitchen, in my day-to-day routine, in lots of ways…I just feel like I’m tired and bored all the time.  It’s weird.  My days off are so lazy.  I read, I draw, I read some more.  But I miss my desire to be in the kitchen.  I don’t know where it’s gone.  Thinking of dinner ideas is hard for some reason.  And it’s never been like that before.  I ask Kyle to suggest things since I seem incapable of coming up with anything other than eggs and toast and… Read more >

Crock-pot curry with tofu & veggies

Another crock-pot recipe coming your way.   Crock-pots seem to adore dried beans and lentils.  Photos first, words after.         Easy peasy!   Crock Pot Lentil and Tofu Curry Ingredients: 1 1/2 cup dry lentils (I used yellow and pink) 1 1/2 cup coconut water 1 1/2 cup plain almond milk 1/2 cup water/vegetable broth 1/2 onion, finely chopped 1 clove garlic, minced 1 tbsp curry powder 1/2 tsp garam masala 2 tbsp soy sauce salt & pepper to taste 1 block (12 oz) extra firm tofu, cubed 1 cup frozen peas… Read more >
