Here are some products I’ve tried lately (or over the last few months…). Some were bad, some were okay, some were good, and some were awesome. So I figured I’d share. I have no affiliation with any of these brands. These are simply my honest opinions. 1. On bread and on greens

Quick meals these days! My philosophy: Throw something on toast or a bed of lettuce and call it a day.   [The Essential Baking Co] GF toast with avocado and goat cheese. GF toast with almond butter and a fried egg. GF toast with goat cheese and smoked salmon and balsamic glaze (carrots and grapes on the side). Easy Peasy Baba Ganoush

  This meal was entirely centered around the smallest thing on the dish.  The babaganoush! If you want to make a real legit baba ganoush, David Lebovitz is your man.  I had read his recipe long ago and thought I could go off memory.  I totally botched it (forgetting almost every ingredient aside from the eggplant) but the main thing I took away from his recipe (and did implement in my version) was charring the skin first. Freezer meals for your summer veggies

I realize this looks like kinda a mess…buuuuut… What can I say? Do you eat with your eyes? No. I created this dish because I had squash for days and thought it would be a good idea to cook some bulk freezer meals so I have healthy home-made stuff on hand. Hello layerzzz. Storing summer bounty

Tomatoes, chard, kale, basil, parsley, zucchini, squash, eggplant, corn, peaches, plums, berries, melon, I could go on and on…   Our kitchen counter used to have a fruit basket that was adequate.  But now that we’re in farm country it’s spilled out onto the counter and beyond!  I love it!    And for the record, we have a really big kitchen counter!  [Yikes, that’s messy] What to do with all this wonderful cheap produce!  Uh, freeze it?  Yep, that’s my plan and I’m sticking to it.    First up, pesto!   I used TONSSSSS of… Read more >
