Mexican Layered Casserole

This dish has the essence of a layered Mexican dip with the meal-like heartiness of a casserole.  It’s awesome.  And not remotely complicated to make assemble.   Hooray!  I did something productive in the kitchen!  Mexican Layered Casserole [vegan, gluten free] Ingredients: corn tortillas (check ingredients, some do contain wheat) extra firm tofu tomatoes corn teese nacho cheese sauce salsa paprika cayenne pepper chili powder cumin Directions: Coat bottom of a large (9×11) casserole dish with olive oil.  Layer pieces of tortilla.  Add thinly sliced (drained) tofu.  Sprinkle seasonings on top.  Layer tortillas.  Layer corn… Read more >

I just wanted salad dressing

I feel like I’m clinging onto summer with this breakfast.  Home-made banana pancakes with strawberries and peaches.  This was my first sweet breakfast in a long time.   I finally finished off that massive batch of vegan gluten free pancakes that I made a while back, so I had to do actual work in the morning for these.  The effort was worth it, but I wish I’d had the energy to make a huge batch so there were leftovers.  Part one of lunch was half a sweet potato with tofu scramble.   I’ve been on… Read more >

A non code

I had such a chaotic day at work, and the weird part was it was totally stress free and enjoyable.   For breakfast I had three leftover pancakes from earlier in the week (I always make extra for work and then end up eating half the extras, which leaves me with a measly portion to take to work).  Luckily I had banana bread muffins too. My lunch was leftover Caprese Caesar pasta salad.  AKA my favorite dish on the face of the Earth.    We had this for dinner the previous night.  I can’t… Read more >

Four ingredients

If you like Italian food (particularly lasagna) and you’re looking for a shortcut.  This is it. Vegan and gluten free deliciousness is minutes away.  [Ok, that’s a slight exaggeration, there’s definitely 30 minutes of oven time to factor in] What you need: marinara sauce vegan cream cheese (I used Follow Your Heart brand) rice paper (Asian markets will have them for half the cost of conventional grocers) tempeh (I used LightLife flax) What you do: Layer.  For the rice paper, hold it under running water for a few seconds so it starts to soften.  Once… Read more >

Italian Amore

It’s been a while since I’ve made lasagna.  Kyle reminds me of this every month or so.  It’s one of his favorite dishes.  I went through the HHH archives and although I’ve showed the final products a few times, I’ve only posted a recipe once on the blog (a very long time ago). You’re due for an update. And since we are working on cleaning out our pantry and freezer, I figured it was high time I did the damn thang.  After all, we had two boxes of noodles, three jars of marinara, and two… Read more >
