Making a salad a meal

Hi, I’m in a salad rut.  [never a bad thing]   As I’ve repeatedly blogged about, I’m a bit of a prep queen.  Whenever I know I have several shifts in a row, I make sure to prepare healthy and flexible food options ahead of time.  I hate coming home to an empty fridge (and after 12+ hours on my feet, I definitely don’t have the energy to start cooking a meal from scratch).  This week’s examples: Lentils & wheat berries.  [Soaking on stand-by] Veggies. Oh so savory

My meals have been pretty bizarre lately so don’t say I didn’t warn you.   I have no clue how this meal was born.  It came out of nowhere and makes no sense.  At first I thought I wanted sweet oats (my normal breakfast thang).  But then I saw some leftover tofu and said to myself “why not!” I added chai tea to my oats along with half the block of tofu and mashed them all up together. Elise 1.  Night shift 1. Monday’s night shift was fine.  But last night’s had a few hiccups.  It started off well enough (same patients, same routine) but after my lunch sleeping break at 3 am, I got busy.  Downside: One of my patients decided to stop breathing (which is never good). Packing for 24 hours and multiple layovers

The art of packing food is my specialty.  Much like making my daily work eats (tutorials here), packing food for traveling is a bit of a craft.  Some may find it easier to buy meals at the airport rather than go through the hassle of taking extra baggage through security.  Personally, I’m not one of those people.  I don’t care if it adds 25 pounds of dead weight that I have to schlep by plane, train, and automobile, for me it’s SO worth the energy.  The cost to benefit analysis probably differs depending on your… Read more >

Klassy boy

The chefs at Napa Valley Grille thought they were making a decadent chocolate cake…   But to my husband, chocolate is chocolate is chocolate. Eaten like a brownie-from-a-box.  Klassy.  My ultra refined taste buds demand much better manners.  I prefer my chocolate in the form of a Larabar – especially the Peanut Butter Chocolate Chip.
