What to do with broccoli stalks

Old post alert! This was written a few weeks ago, but somehow got lost & forgotten in the wordpress queue. Still figured I’d share… Scraps! Red lentils, broccoli stalk, carrots, celery, butternut squash soup (and unpictured TVP). Doesn’t look like much huh. Unless you have a crock pot and a bunch of spices. Oh really swan!?!?? Once again this is proof that crock pots love lentils and everything (even crappy messed up bread) tastes good when you make it in the slow cooker. Too bad crock pots don’t photograph nearly as well. MoFo recap

Since I returned to eating eggs…a while ago…I no longer consider myself vegan.  I’m basically a dairy free vegetarian.  But that doesn’t mean I don’t like vegan food.  I love it actually.  I eat it often.  And seeing as October was vegan mofo, I decided to recap some of my daily vegan eats.  October 1: Spaghetti Squash with Marinara & Tofurky   October 2: Quinoa & Seitan with Red Almond Sauce   October 3: Mexican Layered Casserole October 4: Blue Plate’s vegan white bean soup and gardenburger salad October 5: Pumpkin Cheesecake Pie   October… Read more >

Wanted: a new brain

My memory is gone.  Apparently this pregnancy brain fog thing is the real deal.  I forgot our garage code last month and had to call Kyle to remind me what it was (I have no idea how my mind blanked out about that since I punch in the four numbers so regularly).  And I almost missed a work shift because I had my schedule wrong (I am so lucky the charge nurse called me a few hours beforehand otherwise I definitely would have been a no show at the hospital).  I’m constantly going upstairs to… Read more >

I just wanted salad dressing

I feel like I’m clinging onto summer with this breakfast.  Home-made banana pancakes with strawberries and peaches.  This was my first sweet breakfast in a long time.   I finally finished off that massive batch of vegan gluten free pancakes that I made a while back, so I had to do actual work in the morning for these.  The effort was worth it, but I wish I’d had the energy to make a huge batch so there were leftovers.  Part one of lunch was half a sweet potato with tofu scramble.   I’ve been on… Read more >

Unappetizing names

Pate.  When I lived in Spain, my senora made me sandwiches with pate spreads all the time.  At the time I wasn’t vegan, but I already shunned dairy and avoided most meat (chicken and fish were still in my diet though).  I told her over and over again I didn’t like pate – it reminded me of cat food.  But she repeatedly made it for me.  As a result I get shivers up and down my body whenever I see or hear the word.  This is especially unfortunate because many raw spreads are dubbed “pates”… Read more >
