Veggie Chorizo & Kale Rice Casserole

OH.  EM.  GEEEEEEE. Ok, I know it’s kinda weird to get SO excited over a casserole, but this was crazy good.  And simple! A weekend of firsts

One handed Top Chef challenge

It’s hard to write about food…all I want to do is chat brag about my baby boy. The newest trend

I have the coolest friends.  Ever since we started budgeting my besties have been awesome about making dinners together (as opposed to expensive meals out).  Last Friday we made vegan tortilla soup with Ethel. Lunch Lady

Kyle’s coworkers tease him (in a fun, non-mean way) about his healthy vegetarian lunches.  Apparently he’s the organic, non GMO hippie of his office, just like I am in mine. 🙂 Now his colleagues are wondering when I’m going to start packing food for all of them.  Which I’m considering a victory for veggies everywhere.    Thanksgiving leftovers on quinoa.  Oatmeal & snacks.   Spaghetti.  Crock-pot potato chowder (recipe coming).   Pita SB&J with organic Swanson sunbutter and home-made pluot plum jam.   18 Rabbits gracious granola packet with organic vanilla greek yogurt.
