What I Ate

Buenos dias! Ran out of kid bowls. Then I finished this off.  Was pretty full after but knew that leaving <5 bites for the next day was a very lame option.  So I just did tha thang. This is now in V’s kitchen.  I’ve ordered the tomatoes with olive oil and I can verify that the chef is quite talented. Not exactly a bargain at $9 but he assured me it was organic.  😉 My salad in real life had no tomatoes, but a ton of avo. More avo than salad really. Soccer! We have… Read more >

Rain rain go away

I was feeding them breakfast the other morning when the doorbell rang…they were eating leftover steel cut oats with all the toppings you see below (sunflower seeds, maple syrup, raisins, shredded coconut).  I thought to myself who could possibly be ringing the doorbell at 8 am? It was our neighbor dropping off Girl Scout Cookies! She is THE CUTEST. I ate after the kids were done.  This batch is going faster than the last.  I think my appetite has been higher than normal lately.  I feel like I’m eating bigger portions than usual.  And that’s saying… Read more >

The first day of tee ball

This is the easiest meal ever. You could use any pre-packaged Asian salad mix, or just make your own with bagged slaw, cilantro, and shredded carrots (all things we typically have on hand).  Toss in sesame seeds, nuts (slivered almonds and cashews for us), and a sesame dressing (I keep the TJs soyaki one in the pantry for such situations). I added baked salmon to everyone else’s but wasn’t really in the mood so I had a bites worth just for some protein, fats and omegas. This filled in for the fish.  😉 I made… Read more >

Things we can’t seem to get enough of lately

(a) Caesar salads and (b) taco salads. Both easy so it makes sense that they’re go to options.  The first isn’t as filling without a protein option, and the kids don’t like tempeh as much as the adults do, so I’ve been using nuts and quinoa and other things to bulk it up.  The second is such an easy sell (and I am so not above tortilla chip bribery btw) because they love everything that touches avocado and/or daiya cheese.  And chips.  It’s also the easiest to modify in small ways that affords variations to… Read more >

The partying continues

Kyle’s parents came this weekend!  They haven’t seen the kids since we visited them in Idaho 6 months ago so I’m glad they got to spend some QT with their grandkids.  They arrived Friday afternoon, when Kyle was still gone, which was a big help for me.  We had a crazy busy Friday morning before they arrived – with gymnastics classes and a Pinocchio puppet show accompanied by the Davis HS symphonic orchestra. Breakfast of champs…fueled for lots of trampoline and bars and balance beam action.  Their oatmeal (steel cut) had mashed banana, raisins, hemp seeds, chia seeds,… Read more >
