I often just mix some almond or soy milk with a 2-3 tea spoons of chia seeds and maybe some cocoa and drink that as a snack. I love the gel texture ^^

You, my dear, are the sole reason I was introduced, and experimented with Chia seeds.. I am actually in need of replenishing my kitchen with them. I mostly use them in smoothies, but I also use them in yogurt parfaits.. Which is funny because if there is a seed in my mouth that I didn't swallow, I will noticed soon enough because they start expanding in my mouth as the day progresses hahaha. My students, I'm sure, see me trying to get them out throughout the day.

Elise-
I made this tonight. And it is SSSOOO good. I too didn't use the garbonzo flower, and it turned out great. However, it is a little questionable looking, and even more if you unwrap it while it is hot and steamy.....steaming brown log..... my room mate was all sketched out.

spinach will work no problem. any green will do.
theres really no good sub for nutritional yeast, though. maybe parmesan cheese if you can tolerate it? but youll lose the dairy free (fodmap friendly) and vegan part of the menu then.

looks like we both had a busy day this week at the hospital.

omg, we have clinical on Tuesdays and it was crazy. Didn't stop from 630 am to 2 pm. we were almost falling over by the end! one of my patients coded on me and i never had that experience... :S

but your food still looks good! ;)

the only thing that makes me get out of bed at 4:30 on Tuesdays is my vegan, GF chocolate banana muffin! :D

I always use a flax egg (or sometimes applesauce), but I had NO CLUE you could use chia seeds too! This is so neat--I may need to try this in a future baking adventure! Thanks for the info!
