Countdown to Cabo

Woo hoo! Only 2 days ‘til I’m relaxing in warm and sunny Cabo San Lucas (well, technically only one day, since I leave tomorrow).  Vacay here I come!  Not that I’m living the rough life right now…vacation is vacation.  So even if I am holed up in my shoe box of an apartment (East coast weather…grrrrrrrr) at least I’m not at work, and at least I’m not having to brave the 30 degree weather at 5 am to get there, either.  Phew!  But, after putting in ALL those hours in December, I think I deserve it.

Plus, a toasted Ezekiel English muffin…which I lathered with 2 different types of jam.   One was a home-made plum, and the other was a home-made strawberry.  Kyle’s family has access to the freshest fruit, we are talking fields and fields of berries.  Lucky for me, I get the yummy yields – which just happens to be THE best jam.  It really tastes like you are eating pure fruit mashed up into each bite.  Oh, and the delish Ezek muffins help, too  🙂

I also had an egg/tofu scramble with the toasted muffin.

First I chopped up GC tofu that I baked the day before…

Then I threw it in the pan with some egg beaters…to make a delish plate of protein (this should keep me going for a while).

After breakfast, I finished my first book of 2009 (at least I’m sticking to part of my Jan goals).  I read The Myth of You and Me by Leah Stewart, which was so-so.  I liked it, but wasn’t thrilled.  Not something I’d pass on to a friend.  If you are in need of a good book, check out goodreads for some quality recs…I’ve had great success thanks to that site.  I wonder what I’ll start next…maybe Water for Elephants.  I’m open to suggestions, though (since I’ll need a few while relaxing on the beach in Cabo).

Off to the gym.  But first, this snack.

Gym sesh, not so hot.  I’m in a RUT.  I wanted to go to a spinning class, but the closest one is not close at ALL, and the times weren’t the most convenient (add in the snow factor, and it’s a miracle I even left the apt at all)!  I ended up doing 30 mins on the tread mill, 30 mins on the elliptical, and then 15 mins on the bike.  Don’t be deceived by the work out I just described, on paper it looks intense, but my feet were dragging the entire time, and I did everything on the lowest possible setting.  Blah.  I stretched, too, but no abs or arms.  I was pooped.

Anyways, errands abound, I needed a pick-me-up…good thing I had popped these babies in the oven earlier today.

Sweet potatoes!!  Mmmm…I snacked on a few before heading out 🙂

Later on, I was still dragging, so it was time to pull out the big guns.  You know it – coffee, my true love.  Latte time!

    Really!?!? You’re going to Cabo?!?! I’ll still be here on Saturday. I’m leaving Sunday afternoon. Word of caution, once you get off the airplane and step into the airport, it’ll be kind of hectic because there are many taxi/travel/resort companies trying to get you to go with them. They are pretty harmless, but they can be a little misleading. Also, the weather is not that hot, especially at night so bring some light sweaters. My husband and I are staying at the Melia Cabo Real Resort, where are you staying?

    good to know, thanks. my parents have a house in cabo in the pedregal neighborhood. im just looking forward to getting away from the snow here in nyc, so any change in weather will we welcomed….how has it been staying vegetarian?
