Cousin time

I went on a leisurely run this morning and the weather was perrrrrfect. It is 100% Fall in Idaho.  I have been listening to two new podcasts “Throwing Shade” and “Homophilia” which are similar in that they very casually discuss LGBT issues and current events with as sarcastic and comedic tone as possible.  I like it. Plus there’s only so much NPR politics I can listen to without pulling all my hairs out.

Anyway, I digress.  Afterwards, I made myself a three egg scramble in coconut oil and mashed up half an avocado on the side. Fats much?  I had a decaf coffee with almond milk on the side which was so heavy on the milk side it was basically a latte.  I had a second and then kicked back while the kids played on their own.

FOOOOTBALLLLLL.  TIMEEEEEE.

Same (ish) lunch as yesterday but with a whole new bag of chips.  These chips are so addictive, it’s like, if they are in the house, I can’t stop eating them. I have no willpower no matter how hard I try, so I just didn’t even bother fighting it.  Salt, pepper, fat, carbs, repeat.

Connect the dots are a big hit right now.

Cousins!  Kyle’s brother’s family came over and my wee ones could. not. wait. to play with them. They asked from the second they woke up that morning and then every 5 minute interval thereafter. They were so ecstatic. And it continued all day long.  It was so sweet.

In case you were wondering what burgers for 12 (18?) looked like.

Ok so the deal with the sides…Beverly overthought this by approximately 17 hours.  I thought both were good but she wasn’t feeling awesome about them.  The pasta salad was a little meh because of the GF pasta, but I think it’s hard to make a cold pasta salad in advance with GF noodles.  I still ate it and enjoyed it!  The mayo sauce had me.  But the slaw was SOOOO good.  I went back for another massive plate.  Like piled high.  I think I ate 1/3 of that bowl by myself.  So I got the recipe to share, obviously.

Cabbage and Corn Slaw with Cilantro And Orange Dressing

Ingredients:

  • 1/3 cup frozen orange juice concentrate, thawed
  • 1/3 cup unseasoned rice vinegar
  • 1/3 cup canola oil or vegetable oil
  • 2 (8 oz) bags coleslaw mix
  • 4 ears of fresh corn, shucked, kernels cut from cob
  • 2 medium carrots, peeled, coarsely grated
  • 1 medium red bell pepper, stemmed, cored, cut into thin strips
  • 6 medium green onions, thinly sliced
  • 1/2 cup chopped fresh cilantro

Directions:

Whisk orange juice concentrate, rice vinegar, and canola oil in small bowl. Season with salt and pepper.

Combine slaw mix, corn kernels, carrots, red bell pepper strips, sliced green onions, and chopped cilantro in large bowl.

Toss with enough dressing to coat. Season slaw to taste with salt and pepper. Let stand 15 minutes for flavors to blend. Toss again and serve.

There are crinkle cut fries under there too.  I had more of those too.  I was soooo stuffed after this meal. Probably because we ate at 4 and I was still full from lunch when I started.  No. Self. Control.  That said, I knew I was going to eat a ton this whole weekend, so whatever. It’s fun to be spoiled with heaps of delicious food that I don’t have to prepare myself so naturally I have to take advantage.  I’d have to be crazy not to.

I am so happy we got all these kiddos together. They don’t get to see their cousins nearly enough and they look up to them sooo much. P and V mention “my cousins” constantly because we have a photo of them on the fridge but due to geography (and the logistics of working around six kids’ activities), we see them hardly ever.

He was getting the hang of this but unfortunately it was too close to him taking his peanut dose and we had to call it quits because he started having a reaction.  He is coming down with a cold so his immune system is already compromised so we have to follow the dosing rules by the books until he gets better.  And medicate aggressively.

Eventually they left and we put the kids down (they were SO exhausted) and spent the rest of the night packing while watching football. Looking forward to our next visit!

    I love that your kids can play on their own–that is amazing! My little one will NOT do it. Do you remember if P would play on his own before V came along? My girl is 20 months old and I have to be sitting on the floor with her and playing at all times. I cannot cook dinner, I cannot get up to go blow my nose, I cannot get up to go get my phone etc. without her either wanting to come with me or fussing and crying if I just get up and go. I am so worried about this next baby coming and her crying because I cannot play with her all the time anymore. I can’t do anything unless someone else is here to play with her so I can get a second to do dishes or sweep the floor.

    He’s always been like that and from what I know about my friends’ kids, that is not the norm. So I am verrryyyyyy glad for that. I can’t take any credit for doing anything special to foster it though, aside from giving him the space and time to do it. That said, I think siblings help change that dynamic…so there’s hope for you yet! But they didn’t really play together cooperatively until she was 20 months-2 years old. I’d say that’s about when my life got much more manageable FINALLY. Not to scare you, but just be prepared because the first years with two little is CHAOS.

    Haha, thanks. I am very scared about having two little ones!! I know millions of moms and families do it, though, so it must be manageable, right?!? Some days I get so anxious about it I hope this baby never comes out, lol.
