Egg salad on a fresh baguette.

Soft fluffy bread.  Tangy mustard eggs.  They’re a damn fine pair.

The egg salad has 3 eggs (3 whites/2 yolks) + 1 tsp stone ground mustard + 1 tsp honey mustard + 1 tbsp plain greek yogurt

So good.

I sprinkled a dash of salt on top afterwards.  And now in hindsight I wish I’d added a touch of paprika. 

I’m so obsessed with eggs right now.

    I love eggs, they’re so yummy! I have a random question. I’ve been reading so much information about wheat and gluten. There are so many conflicting opinions about whether or not it’s good or bad for you. What are your thoughts on wheat and gluten?

    I go through phases with eggs in which I’m either obsessed and scrambling them with spinach and mushrooms like a freak or avoiding them for weeks at a time, grossed out by the texture and the fact that I heard them described as “liquid chicken.” I’m currently in that second phase, but then whenever I see your pictures, I want eggs again…

    oh my gosh your scramble with the potatoes looks incredible! i love eggs too! although, i’m allergic to the yolk — isn’t that random? just the yolk! so I’ve had to learn how to jazz up the whites — I love whipping them with spinach mmmm:)

    I definitely go through egg phases. I love the whites, but the whole egg love goes up and down every once in a while. I can never eat eggs alone either, they have to be eaten with bread or avocado! I’ve never tried egg salad, but this does look delicious!

    Eggs and chocolate are the reasons I can’t go vegan. But really it’s just eggs. I think I could give up chocolate first. I too go through phases with them, but I do love a good fried egg. And there is nothing better for a quick, high protein,easy pre-workout snack than 2 hard boiled eggs. All I need is a little salt. Hardboiled and in the shell they even pack ok for hiking lunches. So versatile, and a whole food!

    Haha I do the same – but not about the liquid chicken thing, I’ve never heard them be called that (but it might put me off again for a while haha), but I get grossed out by the thought of slightly runny eggs, and the texture… but then other times I love it. At the moment I’m just entering the second phase too haha

    love eggs! they’re so versatile and can be eaten at any time of the day which i love. however, organic eggs where i live aren’t cheap which is the only downside because i will only buy organic eggs

    Today I had two hard-boiled eggs with hummus as a snack, and I had forgotten how much I liked that combo! Plus it filled me up for a couple of hours. A fried egg on quinoa or a veggie burger is also a favorite of mine. I still can’t eat them for breakfast though…unless it’s mixed in my oatmeal!
