How was your night?

Mine was fabulous.

Kyle may or may not kill me for posting that picture.  But it’s worth it.  I had to show you all how adorbz my beau is!

Getting serenaded while eating an apple/cinnamon dessert on the late night – is there a better way to spend your Friday night?  I think not.

But back to the AM.

Breakfast of champions indeed.  I really tested my stomach’s expansion ability with this one.  First of all that coffee mug was the size of my head (and I had 2 of ‘em filled to the brim), and second of all, the pumpkin oat bran seemed to grow to triple it’s size once it was in my stomach.

I took a picture half way through…which is when my stomach was really starting to say “enough.”

And yet, the Napoleon in me forged ahead, determined to polish it off.  Wow. 

Down for the count?  Yessir. 

I relished the fact that I was totally out of commish and took the opportunity to lounge on the couch and watch last night’s season finale of Project Runway.  I was really hoping for Carol Hannah to win :(

Anyways, noon came and went, and I wasn’t even remotely hungry for lunch, so I headed out to get some errands done…and returned a while later ready to hit up the gym.

I was pumped up and my legs seemed like they could’ve gone on for 10 miles, but I called it quits after 6 and spent the rest of my time doing some ab work.

Trying to convince me that hummus isn’t the best post-gym snackage is like trying to convince me that Ashlee Simpson is a good actress.  I’m sorry, but there’s factand then there’s fiction

For dinner I really wanted to recreate the WF butternut squash side dish that I had the other day, so I tried my best worked with the few common ingredients I had on hand.  Of course my version was far less oily and onion free, so I liked it better, but it wasn’t exactly a complex recipe.

Roasted BN squash and dried cranz (with some agave syrup drizzled on before roasting to increase the bronzing).  I should market this tanning approach to the OC Housewives.

I also adapted a curry dish that I saw in Terry’s cookbook for a course deux.  The OG recipe was for curried parsnips, but I wanted to add in some EXTRA beta-carotene (since I’m clearly lacking in that are of my diet), so I bulked it up with a couple of horse carrots.

I peeled them, steamed them, doused them with EVOO, curry, cinnamon, ginger, salt & pepper, put ‘em on a pan, and popped them in the oven. 

I have no clue what happened to my photo of the final product!  :oops:

I had a heaping plate full, so as you might surmise, it was a very fiber-ful dinner.  Gotta keep the pipes clean (TMI?) ;)

On the late night I still wanted a little something in addition to my (above mentioned) apple dessert, but couldn’t figure out what to have.  Rummage, rummage, rummage…AHA!  This Yummy Mix by YouBar’s Build-a-Trail-Mix was perfect.  It had some crispy rice granola, chocolate covered raisins, dried cranberries, cashews, walnuts, and red licorice.

Pretty awesome, huh?  I shared the nuts with Kyle.  Since he was sweet enough to sing me pretty songs (and I, ahem, hate nuts), it was the least I could do.  No, really, it was literally the least I could do…psshhh, b!tch better back up off my dried fruit!  Kidding – I love him :)

Oat bran multiplying in your tummy—girl I exploded/overflowed my coffee pot with a new coffee from TJ’s today. It was one of those blends that the grounds just SWELL massively. Like rice or something growing in my coffee maker. It was such a flippin disaster. I blogged the G rated tonite.

Your trail mix looks better than mine did. Cant remember which blend I got but yours def looks better. Lucky bee-otch :)

Hey Elise, i’ve been reading your blog for a little while, you are so funny! I came across this comment and thought i had to respond. Even though my blog is a work in progress right now, the world will soon see that you are no longer the apple champ…I easily pack in 4 on a slow day. (also a runner and 99% vegan:)

Also, I wanted to let you know that halfway though reading your post (after the coffee picture) I got up to try my hand at frothing my own coffee like yours (but without a frother)…and it halfway worked. I am now enjoying it immensely. Thanks for the coffee inspiration.

that oat bran is oh-so volumous (i can’t spell) and i feel you on the finishing! sometimes i decide not to make it because i don’t want to have an oat bran babes at 8am. you manned up well. atta girl

I need to make the butternut cranberry combo. I bought a squash and meant to use it, but ate it before I had time to pick up cranberries (that would be less than 24 hours…ah, squash). Hummus is the perfect post-ANYTHING snack, no/

I am intrigued by this 5 year art project- what are you doing? I have visions of you building a life-size Eiffel Tower with empty Sabra tubs.

oh my GOD that sounds like the best project ever, ahaha (and something i would do). its just a floral pencil drawing. but i was stupid to use pencils for sure a MASSIVE piece. so needless to say, its taken a while.

squash and sweet potatoes have a 1 hour shelf life in this apt. i hear ya.

I love that you eat your *SLICED* apple with a fork! You are too funny! Do use a knife, too to cut it into even more manageable sized pieces as you go??

You know, I dislike nuts so much that I can’t even eat dried fruit out of a trail-mix that contains them…they make the dried fruit taste “nutty” to me! Yes, I am aware that I am a freak… (and I swear that is the ONLY thing that will keep me from dried fruit…) :-)
