Hummus’ return

Just popping in to let you all know that this week’s galactans challenge is still in full effect.  Each day I’ve been testing my digestive system’s limits with a different member of the category – including peas, beans, lentils…and hummus.  Oh glorious hummus.  [For a list of the others galactan foods check here]

I somehow managed to delete the final product of this banana, oat, pumpkin combo.  So, yeah.  This is all I’ve got. 

Work eats: salad, Halo s’mores ProBar , Enjoy Life chewy cocoa loco bar.

This salad was just your average veggie smorgasbord…until I added a dressing.  Hint: it’s from a wonderful book that I will soon be giving away!!

I know what you’re thinking.  Falafel chips!?!  And to that I say HELL YEAH!

They were pretty awesome.  Smaller than I was expecting (they were more like fritos in shape), but the flavor was dead on.  Nutritionally speaking, they are awesome – vegan, gluten free, and devoid of weird, scary, unrecognizable additives. 

These, however, have a less glowing review from me.

They were pretty pointless as far as snacks go.  And since I’m not an astronaut, I have no reason to consume fruit in a freeze dried state.  I tried one and tossed the rest.

These pitas were my only exposure to wheat for the day (I didn’t end up eating the tabouli), so my GI system was ok (not perfect, but not horrible).

I finished the hummus and the falafel, but was still hungry…

So I continued the hummus-athon with carrots

As with the fructans, I’m going to wait to give the full report on how I’m tolerating the FODMAPS, but from what I can tell, galactans seem to have a delayed onset in symptoms.  I am fine during and right after I eat, but the next day I definitely feel the bloating and gas that I’m accustomed to with IBS.  Like I said, though, I’m going to continue to experiment – with and without other FODMAPS in the mix.  I’m trying not to jump to conclusions too quickly, so I get a real sense of my body’s trends in physiological reactions.  I promise I will share everything once I’m through!

    Hopefully your hummus trial goes well!! 🙂 Is it just me, or do the Enjoy life chewy bars seem to be shrinking??? I had one the other day and it was gone after a bite! I swear they used to be larger!!

    falafel chips? totally sound like my kinda chip! So want to read ‘Thrive Foods’…. heard so much good stuff about it. fingers crossed for ya on the hummus trials – have you looked into testing your levels of stomach acid? personally, I have really low stomach acid, and I know that contributes to my issues – a naturopath gave me a really good tip which helps with symptoms – 1tsp apple cider vinegar in 1 cup of water 1/2 and hour before main meals (just gets the digestive juices going!)

    Yeah for hummus! I have the same thing with eating wheat… not too bad right after but the next day turns into a bloat fest 😉 Boo… And its just gotten worse the longer I have stayed away 🙁 Good luck with your continued trials!!

    I definitely can’t eat those freeze-dried crisps alone either, but they go wonderfully in greek yogurt and in baked goods.

    I’ve been adding back FODMAPS with abandon and it seems like I’m getting better haha. I don’t know why but for some reason the low fodmaps diet was really slowing down my GI tract. I felt like I was still getting plenty of fiber but maybe not. Anyways, things are better now. Apples, chickpeas, white beans, dates all seem to be fine.

    You have to try French Meadow Bakery’s sprouted cinnamon raisin bagels. They are in the organic frozen section and they are amazing! So much better than that dry ezekial stuff.

    Now THAT is what I like to see! HHH without hummus is…well, it it’s just not right! 😉

    I can’t wait to see your review of the Thrive Foods book! I just read Mama Pea’s post on it the other day and I’m definitely intrigued by it. I may have to check and see if they have any of his books at the library!

    Oh and as far as that astronaut food goes…I did the same thing with the apple ones. Definitely not what I was expecting! Seriously, who wants styrofoam as a snack?!!

    Hi Elise,
    I hope you are going well with your FODMAP challenges! I did the same myself a year ago and am now feeling so much more in control of my diet and symptoms.
    DID YOU KNOW that if you make your own hummus, you can get rid of all the evil galactans before you start cooking the chickpeas? My dietitian told me that galactans are water-soluble so if you soak your chickpeas for a few days (changing water regularly) prior to cooking, you will leech out all the yuckkiness!

    thank you charlotte!! so helpful. i had heard a similar thing before, but i have yet to try it. have you ever cooked the beans from their dried form with kombu? i was wondering if that would help too. i still have quite some experimenting to do…

    I haven’t used kombu… will have to try and find some! I have also been told that asafoetida helps with digestion of legumes/lentils etc, but I am finding that long soaking is working for me. Keep an eye out on my blog for my cooking experiments (I have just posted my legume-cooking technique). I love the look of your quinoa granola! YUM!! Can’t wait to try it.

    falafel chips! they sound yummy! hope you will be able to eat hummus again. have you tried to put in turmeric powder ? it reduces inflammation and has helped me lot in digesting foods too.

    that greek platter is my ideal lunch. sorry you can’t indulge in the tabouli! i wouldn’t have the willpower to stop (i love the stuff haha)
