Leftover makeover

Leftovers are the bestovers, especially when they are waffle goodness.

The recipe yield was enough for 2.75 servings, so I was still good for Monday but Tuesday was a little small. Nothing a quarter cup of nut butter can’t fix, though, right??  Here’s Monday’s serving though.

Which got the Earth Balance treatment.

A group of us went to the downtown fire station for a tour.  It’s a classic preschooler field trip and I think I’ve been on almost 10 of these but whatever.

V was pretty bummed that we were neither climbing in nor taking a ride on the fire trucks.  At least she got a sticker badge.

Where are we???  My friend took this pic and sent it to me asking where I was because she couldn’t find me.

Oh there we are.  Or at least there’s V.  The top of my forehead is barely visible behind my friend with twins, ha!

I had a narrow window between the fire station visit and Pattycakes’ school pick up so I ran to Target, hoping to knock out my list in under 30 minutes.  What a foolish thought.  This looks like a Larabar ad, no?

I ended up getting 99% of the things I needed so that’s a small success.  Unfortunately, I didn’t bring a snack for V so I wound up buying a box of Larabars so she could have one while we shopped.  Full disclosure: I was planning on getting Larabars anyway and once I saw this seasonal flavor I was very excited.  She loved it, obvs.  She also had a banana (before the bar) because I remembered right when we entered the store that they now offer kids a piece of fruit when you shop, much like WF does.  I’m not sure if this is actually new or universal to all stores, but our Target just started it.  I go there all the time but never remember.

Hooray for the green goddess salad from Selland’s!!  I ate it with the rest of these chips and carrots.

It had crunchy celery, crisp green apples, and salt and pepper chicken with the perfect amount of mayo and did NOT disappoint.  I ate the whole tub, naturally, and was savoring every bite.

After lunch I did a little “leftover makeover” for dinner – a term dubbed by Michelle of nom nom paleo, which means re-purposing your leftovers from one dish into a new dish.  Her book has a bunch of ideas for leftovers of many of the recipes that yield a lot, so with the remaining portion of “Sunday Gravy” I made her “Monday Frittata”.  This dish has already provided one round of leftovers and is now on it’s third iteration.  Amazing!

I didn’t think the frittata alone would be enough, so I made it into an “AM in the PM” themed meal and added toast and bacon.  Plus roasted zucchini because I knew another veggie was necessary with all that salty protein.

They kept calling the frittata pizza which I’m assuming is just because I sliced it in a pie shape.

They both wanted more of it, as did Kyle and I, so by the end there was baaaarely enough for Kyle’s lunch the next day.

I added sheep pecorino romano to mine, cow parm to Kyle’s, and nooch to the kids’.

Another awesome meal from Ready or Not.  And I think I even skipped dessert this night.
