Mexican Layered Dip

Because (a) I’m without Windows Live Writer (still learning how to get XP on my MacBook), (b) I’m not very savvy with wordpress’ blogging tool, and (c) it’s taking me an hour to load each photo, I’m going to post another photo recipe from last weekend.

It’s not like I reinvented the wheel with this one (the recipe is certainly not original), but the photos are pretty and I thought I should share.

(Vegetarian) refried beans

Black beans.

Sour cream.

Corn roasted salsa.

Four cheese blend.

Black beans.

Avocado.

More avocado.

Salsa.

Devour.

I made the above dish for the boys, while I made a vegan take on the layer dip for myself, using:

  • 1 whole avocado
  • corn roasted salsa
  • black beans
  • refried beans

With carrots instead of tortilla chips as scoopers.

I had triple the amount shown because avocados are so freakin’ good.  It was kinda like a massive mexican guacamole mash up.

Aside from guacamole, what’s your favorite way to eat avocado?

Personally, I think hummus and avo make a dynamic duo (no surprise there), but (similar to hummus) I could see it going well with just about anything…if you have new ideas, let me hear ’em!

    I love avocado with anything and everything: veggieburgers, Mexican food, on salad with hummus. Sometimes I just eat it by itself!

    Don’t hate me but…I don’t like avocado. Ahhhh! I feel like a bad vegan, but I just really really don’t like it. I *wish* I did because it is so healthy and and full of good fats etc., but …sigh. Do you hate me?!?

    That dip reminds me of college. Combine it with copious amounts of tortilla chips and Natty Light and you’ve got the bulk of my university experience wrapped up in a salty parcel.
    Avocado and salt – I’m a purist. Maybe some Ryvita crackers upon which to spread the resulting goodness.

    Ryvita? Hmm…I’m gonna have to look into this cracker. Never heard of it! I agree, not much tops avo and salt. I’ve heard avo and sugar is a sweet alternative, so I’m thinking I’ll give that a shot soon too. Ahh natty light…those were the days…hahaha

    your 1st paragraph….ok so i am a blogger user on a MAC. I seriously JUST posted an hour ago about solutions for that. someone wrote in that you can get software that takes windows programs and converts them so you can use them on a mac. Is that what you do? I realize you’re on wordpress and im on blogger, but if we’re both on macs, and you use livewriter, then I should be able to also. Sorry this has nothing to do with your food content which looks great but holla if you have a second!

    yes averie. live writer is far superior and was the main reason i didnt wanna switch to a mac. but to find a way around this i plan on operating windows in a virtualbox on my mac. i just bought windows XP so that i can download it on my mac and then get live writer again…im a bit busy with the wedding being less than a week away, so i dont anticipate actually getting around to it until september…ill help you do it then if you want. its not too hard if i can figure it out, anyone can!
