Moon Landing

I made his and hers cookies for dessert the other night.  It was 9 pm and we wanted dessert, but the only thing that we Kyle felt like was warm cookies.

It wasn’t in my vows, but cookie bitch is definitely one of my wifely duties.

You know that scene in Modern Family when Jay and Cam are in the men’s locker room together…

That’s what I thought of once I pulled these cookies out of the oven.  Peanut butter moon landing! [the kissing cookies in the lower left corner]

Peanut Butter Cookies

[vegan]

Ingredients:

  • 1 1/4 cup whole wheat pastry flour
  • 1 cup whole wheat flour
  • 1/2 cup unsweetened vanilla almond milk
  • 1/2 cup Earth Balance, melted
  • 1/2 cup natural peanut butter
  • 1/2 cup vegan sugar
  • 1/2 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • optional add-in: BabyRuth bar, coarsely chopped [not vegan]

Mix wet and dry ingredients separately and then combine.  

I used half of the dough to make the vegan version of the cookies, and once those were in the oven I added the BabyRuth bits to the rest of the dough.

Rolled them into balls.

Placed them on a cookie sheet sprayed with PAM.

After 12 minutes at 350 these gorgeous little peanut mounds were ready for my mouth.

*To get a less flat cookie, chill the dough before shaping them into cookies and baking them.

The other cookies (Kyle’s BabyRuth batch) took 15 minutes (3 minutes longer) in the oven.

The exposed pieces of candy bar oozed onto the foil, which I thought was going to be hard to scrape off. 

Not only was it easy to pull off, but it turned into a kind of toffee taffy that may as well have been it’s own dessert it was so delicious. 

I think it was Kyle’s favorite part.  Well, maybe not his favorite, but he definitely enjoyed the caramelized caramel a lot.

Needless to say, his batch is long gone and my vegan cookies have been mysteriously vanishing. 

It doesn’t take a detective to solve this case.

    That is hilarious that you looked at those cookies and thought ‘moon landing’. And how did you resist eating the dough cold? I always prefer that to the baked result!

    This is extrmeley strange, but here i go… I made these cookies using sunflower butter and no candy. They taste delicious but today, I bit into one and on the inside they were BRIGHT GREEN. It’s not mild because they’re less than twelve hours old and it’s only on the inside. ANY insight? I’m baffled!
