More freckles and Vitamin D

There won’t be many pictures in this post because I was in the sun ALL. DAY. LONG.  I can’t get over it.  I took 4,601,546 pictures of cherry blossoms and dogwoods today.  Literally.  My computer nearly exploded with all the megabytes I tried to upload from my camera.  Did I just use a techie term?  Why yes I did.  There’s hope yet.

Anyways, here’s how I started the day – whole wheat sando thin with Justin’s maple almond butter and banana slices (along with unpictured javahhhh).

I had a bushel of apples while taking the city by storm on foot.  I came back in the late afternoon for a cool refreshment.

Berry delicious. 

  • 1/4 block silken tofu
  • 1/2 cup frozen mixed berries
  • frozen 1/2 banana
  • 1/2 cup water
  • ice ice ice baby

It’s pretty much the only way I will drink water, so nowadays I have been trying to make my green monsters and smoothies with all water and ice (in case you cared).

After this, I was back outside.  I multi-tasked and made some phone calls while covering the UWS from park to park (Riverside to Central).  I really meant to go on a run later, but instead, I laced up and did more speed walking in the Park’s unchartered territory (well, unchartered for me…I certainly wasn’t off-roading it).  And by speed walking, I mean dancing/skipping to The Shins.  If you saw me, I’m sorry. 

I got home after 6 pm and it was STILL light outside – love it!

I had no desire to cook so I heated Amy’s Tom Kha Phar Thai Coconut soup.  Since I knew there was no way it would fill me up, I fiber-ed it up.  How you ask?  I steamed kale, broccoli, and peas to pour the soup over.

Ok kids, this is what you MUST do to your next soup.  The kale and extra veggies with the coconut milk took the (already amazing) soup over the edge.  Period.  End of discush.

Another random thing I’ve been meaning to point out (that the kale and sweet potatoes in the soup reminded me of) is how green and orange pretty much always go together.  Is there an exception?  Hmmm…none I can think of.

I had six (!!) huge mugs of non-milk milky tea after dinner.  Dehydrated?  Not any more.

And to close the night out, I had a dessert bowl with almonds, carob chips, raisins, and (way under there) spelt pretzels

    You must have been runnin’ around all day! Whenever i crave fluids i know my day was a crazy, active one! I am thinking you are on to something with the green and orange thing. I cannot think of anything that doesn’t go well together in those colors… Carrots and broc. Check. Sweet Taters and Kale. Check. Bell Peps and Spinach. Check. Oh! I thought of one! Miami Dolphins. They are horrible… But food-wise, your 100% right 😉 What kind of milk do you put in your tea? I am intrigued. You’ll hop back on the running train soon enough, don’t worry about it at all! I have had days and even weeks where i just found other ways to stay active and i was enjoying them until me and running could get along again. I have a feeling you are just going to go on an 8 miler in CA or something and completely kill it and then fall back in 🙂 Until then, enjoy yourself! Moving across the country is one of the biggest workouts you can get, both mentally and physically! Remember that!

    Do you really not drink water?! How is that possible?! I must drink 6-7 sigg bottle fulls a day, lol, in addition to all the hot tea I drink at work to stay warm (damn cold blowing air year-round in my office)! I swear it is like water is going out of style…

    I don’t know why I NEVER think to bulk up soup with my own veggies. I never really consider it a food option because it does so little for my raging appetite, but I think the addition of some green fiber might do the trick. Thanks for the idea. 🙂

    sometimes i use soy milk, sometimes rice milk, and occasionally lactose free skim plus (its not vegan, but its antibiotic/hormones free, and im only vegan due to lactose intolerance so i occasionally do lactose free cows milk).

    right now, though, im obsessed with so delicious’ coconut creamers (they have plain, hazelnut, and vanilla). i use plain in tea, and vanilla in coffee. so good!!

    How could I hate you, lol!? You know we are long-lost food twins…with the exception of your tolerance for nuts and my drinking water I guess, haha. I am sure you know all the “tricks” too…like adding fresh lemon/orange/lime slices to jazz it up etc.

    What about sparkling water? I *LOVE* that and actually thought it was “soda” when I was little, lol. Our mom called it “water soda” and we actually thought that was what soda was til we got to school/went to friends houses and discovered our mom was totally lying to us for years! Oh, to be raised by a hippie/eco-conscious/healthy mom… 🙂

    But seriously, though, I still love sparkling water, and they have “flavors”–my fav is either the lemon or the lime–yummmmm. MUCH cheaper than kombucha 😉
