On bread and on greens

Quick meals these days!

My philosophy: Throw something on toast or a bed of lettuce and call it a day.

Had this a few times…topped with fried eggs to make it extra snazzy.

And now for the salads…

Spinach, tomato, carrots, avocado, and (lots of) hemp seeds.

Realllly in a hemp seed phase at the mo.

This was the same but with nori seaweed sheets and sesame seeds added (Bragg’s aminos as dressing).

Spinach mixed with Hodo Soy Beanery’s sesame yuba strips.  <— I could eat this every day for the next month.

Chard, quinoa, bell peppers, and avocado with plain goat’s milk kefir as dressing.

Spring mix, tomato, carrots, hemp seeds (Late July chips on the side).

Veggie burger, spinach, avocado, celery, tomatoes, carrots.

Baby kale, carrots, tomato, hard boiled eggs, avocado, hemp seeds.

That’s what I’ve been eating on the quick end.  Does it give you some ideas? 

Of course there’s lots of other things I’ve been making that took a bit more time.  Not too long, mind you, this is still HHH – land of the lazy cook.  No meal should take longer than 30 minutes when adequately prepped for.  So in the IOU column there’s lots more to be shared soon.  Teaser…

    The shrimp, the oozing baked good, the food processor dip. If I have to cut it down even more I’d say in that order. With a patty picture on top =D
    And now I crave shrimp..

    I have to admit that the shape and size of your toast looks kind of funky, but that’s probably just because I’m partial to Ezekiel bread and don’t need GF. At any rate, I’m all about throwing stuff on toast, on salad or in a bowl with rice/farro. In fact, those are most of my meals. Easy and delicious!

    I also wish I could venture into hemp seed haven, but they’re so darn expensive over here. Maybe when they go on sale.

    I love the shape of the GF bread, it’s like a zig-zag!
    I second for the stuffed squash vote! It looks delicious and fun to make! Or the quinoa dish at the very bottom…. or the yellow/red patties, or the one with the doughy things with yellow stuff oozing out… that looks interesting!
    So, really, any of the recipes please!!

    I so wish I could get that bread by me! All your food looks scrumptious. So creative. Can’t wait for the IOU recipes. ALL of them, please. But if I had to pick just one to start, probably the one in the first pic. It looks like shrimp? The one in the last picture could be number one priority for me too though.

    I love how your quick meals are always healthy and always sound tasty! The perfect example of how you don’t need a lot of time to get a tasty, filling healthy meal! I can’t wait to see all the recipes but as I just got a huge bag of quinoa from costco, the one that looks like it has that in it could probably go to good use really soon!

    I never tire of seeing your eats! ( Stating the obvious here buuut) You have a way with food. For real :).

    I’ll need to do the hemp seeds on salad thing soon. I’ve been so obsessed with either juicy peaches or apricots, and toasted marcona almonds in my salads lately . Divine.

    Did you buy the same bag of hemp seeds i did at costco?! Hahahaha, i’ve been having a hemp seed moment too.
    I must eat a salad of stuff at least once a day, year round.

    The stuffed squashes look so good, same with the mystery patties on the baking sheet…
