Professional blogger

That’s a title I’m definitely not.  I blog because I like it.  If I were aiming to get hits I would have posted this “St. Patrick’s Day” recipe last week, to give you all the chance to fall in love with it before the actual holiday.

In any event, I made this dish, it took hardly any time, and Kyle loved it, so I figured I should share.

The use of potatoes is what makes it Irish I guess?  It’s not green or anything though.

When I bought these sliced home-style Simply Potatoes I knew I’d make a scalloped potato dish with them.  You could use a mandolin to slice fresh potatoes for this recipe, but I had frozen ones already, so that’s what I used.  I thawed them in the fridge overnight and used them the next day.

Cheesy Scalloped Potatoes

[vegetarian, gluten free]

  • 3 – 4 cups russet potatoes, peeled and thinly sliced [I used 1 bag of Simply Potatoes but the yield is approximately 4 potatoes worth]
  • brie
  • 3/4 –1 cup grated sharp cheddar cheese
  • 1 tbsp garlic infused olive oil
  • 1 tsp garlic powder
  • 1 tbsp onion powder
  • 1 cup plain almond milk

First grease the bottom and sides of the crock pot with olive oil.

Then layer with 1/2 the potato slices.

Then add brie chunks and grated cheddar.  Sprinkle it as evenly as you can, but don’t worry about it too much since it’ll all melt and ooze together once it cooks.

Add the rest of the potatoes and then pour the almond milk mixed with garlic and onion powder over the entire thing.

It sounds sloppy, but I promise it works out.

Cook in the slow cooker on low for 6 hours.

You’ll know once it’s done because it will smell like garlic-y bliss (and I don’t even like garlic!).

The edges get crispy, but the inside is soft and gooey.

Kyle said he could have eaten the entire pot in one serving.  Good thing I wasn’t home for that.  Or to deal with the vampire killing breath that followed.

    Oh gosh, I LOVE scalloped potatoes but haven’t had them in years, this looks so good! And I’m a big fan of the crispy part of things. Haha I’m always the one picking at the crispy edges of casseroles…

    I know totally random but what is your favorite dark chocolate out there? Thinking about trying some bars from Gnosis, ever heard of them???? Supposed to be as raw pure chocolate as there is out there.

    Saying you are “not a professional blogger” sounds like you are discounting your contributions- your readers love you because you are “not a pro” :)! The minute i see your tupperwares with perfect lighting, loads of product reviews and catchy names for simplistic recipes is the day you will lose us all- we love your humanity, how accessible your lifestyle and recipes are, and yes, we love you more because you melted your plastic pb jar. (or maybe because in a sleep deprived state you were more focused on a delicious meal than a nap!!)
