Something I owe

I’m making good on my outstanding debts.

Here’s the long promised coconut cashew butter recipe.

Coconut Cashew Butter

  • 2 cups unsweetened coconut flakes
  • 1 cup raw cashews
  • 1 tsp salt
  • 1 1/4 cup water

First I pulsed the coconut and cashews for 5 minutes.  That’s a long time.  I scraped down the sides between each minute session.

After it started to get thick and wet I started adding water in 1/4 cup increments.

I added the water while it was pulsing (leaving the top on and just pouring the water through the shoot).

Depending on how thick or thin you want your nutbutter you may increase or decrease the liquid portion of the recipe as you see fit.

I left it thick and slightly chunky.

And holy crap it is good.

I’ve been adding it to just about everything I can find…oats, bananas, toast, you name it.

My favorite creation was a mock crepe…

Coconut Cashew Crepe (vegan)

  • coconut cashew butter (see above)
  • tortilla
  • banana
  • agave nectar

I preheated the tortilla, then spread coconut cashew butter on one half.

Then I added thinly sliced bananas…

Folded it in half…

And warmed it in a pan (with cooking spray) for 5 minutes.

Once the bananas started oozing a bit I plated it and spread the top with (another) layer of coconut cashew butter.

And dug in.  🙂

    Great idea! I’ve been experimenting with cashews lately too. I like this somewhat sweeter version. Looks great!

    But why do you put water in it, though? It won’t last as long that way, and if you keep the food processor running for ~5 more minutes it’ll be just as creamy and smooth without it!

    That looks good, and the fact that the coconut is unsweetened… it’s probably sweet but not too sweet. I heart coconut!

    I have a tortilla on hand, so that works. Don’t know why I’m so intimidated by making a real crepe though.

    Oh Goodness, I would definitely make this if it wasn’t for the fact that I got through a 420g jar of Dark Chocolate Dreams in two (count ’em) days, and this looks far nicer than peanut butter!

    I’m pretty much under assumption that there is nothing more tasty in the world than coconut and cashews. Well, maybe coconut, cashews and chocolate, but that might just be too much for my little brain to handle. I’m so excited you posted this recipe. I’ve had problems in the past with adding coconut to my nut butters and it not ever getting creamy. Duh, add some water. Do you think adding milk would work too? Or do you have any other suggestions for making it cream better?

    Milk would work too. Any liquid at all will help it get creamy.

I swear, coconut makes everything better! I just received some Wild Squirrel PB that I ordered a couple of weeks ago and the chocolate coconut peanut butter is amazing…and so drippy!
