“Surprise” cookies

Baby Batch Peanut Butter “surprise” Cookies [vegan, gluten free, FODMAPs friendly]

Ingredients:

  • 2 tbsp vegan mayo (I used nasoya whipped)
  • 3 tbsp creamy natural peanut butter
  • 1/4 cup cane sugar
  • 1/2 tsp vanilla extract
  • 1 tbsp ground chia seeds
  • 1 tbsp water
  • 1/2 cup oat flour
  • 1/2 tsp baking powder
  • pinch of salt

Directions:

Combine mayo and peanut butter together until well mixed.  Add chia seeds and water into the mix.  Let it rest for a bit.

Add everything else in (except the salt) and stir together. 

If the batter is too soft (room temp), refrigerate until cool. 

Roll dough into small balls and place on greased cookie sheet.  Sprinkle salt atop.

Bake for 8-10 minutes at 350 degrees F.  Let cool.

Notes:

If gluten free isn’t important to you, whole wheat flour will work.  I imagine any mayo will work, but the whipped nasoya makes them super fluffy.  I’m not sure since I haven’t tried it, but ground flax could probably be subbed for ground chia seeds. 

8 minutes will leave you with a super soft chewy cookie, that’s almost more doughy than cookie (it’s wonderful).  For a less chewy cookie bake them a couple of minutes longer.

I didn’t tell Kyle what was in these until he tried them.

Before I even asked them how they tasted, he told me they were probably the best cookies I’d ever made him [!!!].

The recipe makes 6-8 cookies, depending on how small you make them.  These were pretty small.

Three for him, five for me.  :) 

For the record, I was only able to get that many because he went out of town the next day.  Even though he made a face and scrunched up his nose once I told him the cookies had mayo in them, I’m sure he’ll request them again.

I’m really loving this new whipped nayonaise!  I’ve never had such soft cookies without eggs.  In addition to having a great texture, they’re pretty awesome tasting too.

    Hey Elise! So I found out last summer that I’m allergic to chia seeds, what would you recommend as a substitute in these cookies? They look delicious and I really want to try making them.

    as the notes in the post indicate, you could sub ground flax seeds. you may need to adjust the liquid though.
