Allergy friendly yellow cake

I know (I think?) what you’re thinking.  Yellow cake?  What’s the point?  Chocolate is where it’s AT!  I agree with you, but every once in a while you need some quality yellow cake in your life.  Like on the 4th of July. Because it just feels right.  Is #merica just so 2013? Since I wanted P to be able to eat some, I made it allergen friendly.  As in, no wheat, gluten, dairy, nuts, or soy.  The batter does contain eggs and I’m not sure if it would turn out without them but if anyone wants… Read more >

Allergen friendly baby/toddler products

I make 99% of P’s food.  You could call it a labor of love, but I hardly consider it “labor” because I enjoy it immensely and nutrition is near and dear to my heart.  As for the 1%…it’s tricky with a child who has allergies.  Obviously in an ideal world we would have the time to make real food for our kids and we wouldn’t have to rely on pre-made items at all.  [Well, actually, in an ideal world there would be no food allergies, but we can overlook that small detail for the purposes of this post]… Read more >

Tweaking it

My baby quick bread has been through the ringer in terms of testing and what I’ve decided is that the bananas’ ripeness (and how much I mash/whip them) is the variable that I can’t account for…and the one that can make or break the texture. I used 3 suuuuuuuper ripe bananas for this loaf and it was perfect.  Moist enough for P.  Sweet without added sugar.  Sturdy enough to be sliced and eaten by me or P (and come out of the pan in one piece!).  And, ummm, delicious, obviously. This version differs from the previous… Read more >

Mini meal plan

Pacman likes to eat.  And I like cooking.  We are a good team. His meal plan typically goes something like this: Wake-up – bottle with hemp milk Breakfast – fruit, home-made bread, eggs scrambled with greens, puffs Post AM nap – bottle with water Lunch – fruit, veggies, puree mash-up Post PM nap – bottle with water Dinner – meat, veggies, fruit, avocado, pasta/puffs Bed time – bottle with hemp milk Breakfast is his biggest meal by far, and lunch is his smallest.  Dinner is usually comprised of leftovers from his earlier meals and parts of our dinner since I feed… Read more >

Munchkin Mash-ups

Mr. P is all over the place with his appetite and cravings.  I think that’s pretty typical for little ones.  Some days I feel bad that he’s not getting very diverse meals, but he doesn’t seem to mind, so oh well. Similar to the problem that Lara mentioned, Patty-cakes doesn’t seem to like anything “assembled”.  I make lots of allergy friendly meals for the 2 (3) of us, but he doesn’t want them in they’re completed form.  Instead, he will often eat the ingredients separately (mise en place style as I prep).  I think he dislikes the… Read more >
