Tips for road trips

I’ve done drive after drive after drive up and down the I-5.  I’ve been doing it for my entire life.  At least ten times every year.  That’s a LOT of time in the car. Readers request: how to roast veggies

Recently, I got an email from a reader (hi Elaine!) with some vegetarian cooking related questions.  I figured rather than respond via email, I’d answer in a post (in case others are wondering too).  Since there are quite a few questions though, I am going to go through them one at a time.  And so continues the “readers request” post series. BYOB (bring your own box) is how we roll in this hippie household.  Pros: price (so much cheaper than buying meals on campus or at… Read more >

Making a salad a meal

Hi, I’m in a salad rut.  [never a bad thing]   As I’ve repeatedly blogged about, I’m a bit of a prep queen.  Whenever I know I have several shifts in a row, I make sure to prepare healthy and flexible food options ahead of time.  I hate coming home to an empty fridge (and after 12+ hours on my feet, I definitely don’t have the energy to start cooking a meal from scratch).  This week’s examples: Lentils & wheat berries.  [Soaking on stand-by] Veggies. [I always have greens, tomatoes, bell peppers, & carrots on… Read more >
