No seriously.  She has never let me down; not once.

I love her recipes so much that her cookbook, Clean Food, was the only one that escaped a 3 month hibernation (in a So Cal storage facility).  Everything else was packed up in NYC, shipped off to a remote location in LA, and has been waiting for us to move into our new Santa Monica apartment…but I just couldn’t part with this one. 

Sure, my SoniCare toothbrush I forget, but not my beloved cookbook.  Priorities people, priorities.

Anyways, in an effort to expand my in-laws’ (vegan) palates, I decided to make a kale dish that I’ve been eyeing for a while.  It’s very very simple – like most of her recipes are.  And it’s also delicious.  Obviously copyright issues prevent me from posting the recipe, but I think my photos and a few comments should enable you to fill in the blanks.

Washed.  De-spined.  And torn it into bite-sized pieces.

In order to figure out how much kale I could fit in the pan, I piled it in beforehand, and then I set it aside.

The more shallots, the merrier.

That’s only three ingredients, excluding salt and pepper.

It didn’t take long for a nice carmelization to develop, and then came the fourth ingredient (the featured component, no less).

KALE!

I let the steam do it’s thang, which took all of 45 seconds.

Then started stirring…

And within minutes it was done and ready to be plated.

This wasn’t the main dish, so presentation was kinda an afterthought.

Clearly if this were a Top Chef challenge, I would have lost points for the plating…but it tasted awesome, so I may have won the judges over in the end.

Simple dishes make me so happy.  I love letting ingredients showcase themselves.  Clean Food indeed.  Thanks again Terry!

    I’ve been looking for a good vegan/vegetarian cookbook so I’m glad you posted about this. There are so many too choose from its hard to narrow down. Love that this recipe is only 4 ingredients. I’m definitely going to try it out soon.
