Thrive

I’m going with a minimalist approach.

IMG_1270

Inspired by the farm fresh produce of the area, the day centered around fruit.  Four courses of it to be exact.

IMG_1271IMG_1272

Pluots + pink ladies

IMG_1273

Ditto + raspberries

IMG_1238

Apple count thus far…four.

IMG_1244

Make that five.

Eventually I moved away from the fruit.  But I didn’t stray too far.

IMG_1241

Produce how I love thee.

IMG_1243

Celery + carrots + avocado + leftovers (that I never posted on).

IMG_1242IMG_1245

Half an avocado can make dirt taste good.

As you can see much of my recent eats (and musings) have been inspired by my latest read obsession.  Brendan Brazier has me hooked.

IMG_1276

My afternoon snack was another creation I made with the Thrive Diet in mind.  Plus a new product Kyle’s mom found me.

Hemp bread + hummus + avocado =  🙂

IMG_1274

Silver Hills Bakery’s Hemptation bread is a live sprouted bread, very similar to Ezekiel or Alvarado Street bread in taste and consistency.

Not only is it delicious, but it’s also good for you.  And I mean really good for you.  I could go on and on about the benefits of hemp, especially for vegans, but too be honest, you should just buy his book and read about it for yourself.

I had it again for dinner.

IMG_1277

Toasted and then dressed up with a vegan Boca burger, tommies, a crunchy shaft of romaine, and all the best condiments.

IMG_1278

By that I mean BBQ sauce, naturally.

IMG_1279

You know what?  I’m veggie burger-ed out.  I want a home-made burger with nuts, grains, seeds, and vegetables.  I want a plant burger.

That didn’t stop me from having seconds though.

IMG_1281

I can’t get over how beautiful this hemp bread is when toasted!  And it has such a hearty flavor.

IMG_1282

For some reason I was even more ambitious when I put this burger together.  I double stacked the tomato slices which made it slightly difficult to get into my mouth (twss).  I still got it down (twss).  😀

Despite the fact that the veggie burgers were cooked on the BBQ (that beats any other way to cook it without question), the bread was still the obvious star of the meal.  Sadly, this company is Canadian, so I have a feeling I won’t see these products again until I return to visit Kyle’s parents.

This trip has been filled with such awesome meals – new recipes, new products, etc. – and now I’m starting to think this may have been their ploy all along to get us to stay…

On your way back south, you should stop in Milwaukie, OR and stock up on Dave’s Killer Bread at their factory store 🙂

I keep forgetting to recommend some places on your drive back down!
You should at least stop in for food in Seattle, if you can’t hang out for awhile. 🙂

There are lots of great places in Bellingham as well, not sure if you’ve had a chance to explore there yet (I recommend the Saturday market if you’re here for another week!)

My personal favorite sushi in the ‘ham. 🙂

And I know you love Starbucks, but try some of the local coffee shops as well, they will convert you!

Love this post! It’s quite similar to how I’ve been eating lately, inspired by a Whole Foods blog that encourages turning off the stove during the hot summer months and enjoying food in its natural state! Cheers-

I love pluots! Are they really grown locally in Washington?!?

PS I hope you are feeling better from your migraine!

I’ve just finished reading Brendan Brazier’s book and LOVED it. I bought it as I started upping my exercise and wanted inspiration for good clean vegan fuel. I can’t wait to get back from my holiday to try some of the recipes out. I also need to get me some maca, he totally sold me on that as a good way to boost recovery. Hemp bread sounds yummy!

Love that book and love reading all about your recent travels! Looks like you’re really loving your return to the West Coast 🙂

  7. Rachael

I’ve been eating similarly lately – we’re essentially living out of a car and traveling for work, so foods are simple, pure and usually not cooked. I feel amazing – I think that there’s something primal and natural about simple foods in summer!
You’ve got me curious about the Thrive diet – might have to peruse a book store in the coming days.
    Have a good week!

I loved the book too! I never tried the recipes though. I don’t know how realistic a raw diet would be for me but experimenting is fun and he makes some excellent points

check his book out – its pretty interesting. and hes so inspirational! i agree with you about the way your body feels when you stick to pure, uncooked, wholesome foods. summertime is the best for that. hooray for being homeless and living out of your car (i can relate) 🙂

  11. elise

    indeed i am 🙂

  12. elise

i know!! the book’ recipes all look awesome. i cant wait to move into our apartment so i have my own kitchen to stock with awesome wholesome foods and get cooking (or uncooking).

  13. elise

Thanks so much! I only have one more day in WA…and incidentally I have Chaco Canyon on the planner for lunch. Next time I’m back in the ‘ham I’ll have to hit up those places you sent 🙂

  15. elise

good call. now i just need to figure out where the heck milwaukie, OR is…and then, how i can keep 12 loaves of bread in our already packed car until we move into our apartment in a week. hmmmm.

and i have to say, i love that kyle’s family is so supportive of your eating. it is so cute to see and amazing. plus, now his mom knows what falafels are, and that is VERY important 🙂

  18. Andrea of Care to Eat

Okay, as even more incentive to go to DKB, the Bob’s Red Mill restaurant and their big-ass store is across the street. Kill two birds with one stone!

  19. Jin

Silverhills breads are my fave!! Squirelly one is really good too. no, all of them are! I guess I’m blessed that the company is based out in Abbostsford (a bit out from Vancouver) so all the local stores are stocked with them!

Next time you drop by, make sure to visit their bakery!

  20. Adam

I am in awe right now… You have introduced me to a bread that may be my ULTIMATE fav… How can i ever repay you? If you are still in Seattle, (You reminded me with the title of this post), Thrive is a restaurant that you should DEF hit up! Take my word for it, you and Kyle will not be disappointed! 🙂

Have you ever been to the vegan restaurant in CA called Follow Your Heart? They have a killer nutburger. Killer.

“Nut and Vegetable Pattie on a Toasted Whole Wheat Bun, Baked with Raw Cheddar Cheese, and Topped with Sprouts, Tomatoes, Pickles, Vegenaise, and our Special Sauce.”
