Tick Tock

Last day of work before I go home!!!!!!!!!!!!!  Today’s shift seemed like the longest countdown of my life.  I was actually pretty busy with my patient load, but I was still hyper-aware of the time left ‘til I was home freeeeeeeee.

Here’s what I had packed up:

I spy with my little eye…MORE pita chips (damn you Stacy), two freakishly large apples, a Chocolate Brownie Z bar, White Chocolate Macadamia Luna bar, Blueberry Crisp Clif bar, and a fiberrrrific MONSTA salad.

Holy veggie-loading.  This salad contained: steamed kale, raw spinach, cukes, steamed carrots, cherry tomatoes, corn, and chickpeas.  Wow!  Now that’s a mouthful (in more ways than one).

When the clock struck seven (ish) I was so excited I practically SKIPPED home (the only reason I didn’t was because I had on so many layers it was physically impossible – but hey, at least I was warm?).

What’s more pathetic: the fact that the refrigerator has NOTHING left in it or the fact that I refuse to restock it, taking comfort in the fact that I will thereby “have to” turn to Stacy’s pita chips.

Maybe don’t answer that. 

Even though I had no desire to cook, it was that or suck on carpet lint, so to the stove I went.

First, I made a really complicated quinoa dish (I added in frozen peas).

Then I made some hummus (chickpeas, nooch, EVOO) in my trusty bullet.

Combined the two.

Added steamed carrots.  And that, my fiends, is what I call a quinoa mess!

It won’t win Top Chef, but desperate times call for desperate measures.

Apples for dessert, along with a wonderful reminder. that “Bliss cannot be disturbed by gain or loss.”

Next time I post I’ll be in CA celebrating a (very delayed) Christmas with my family and Kyle.  Woohoo!

    And I am totally with you–why restock your fridge if you are on your way out of town?! Now that would just be silly!
