Tofu + chickpeas = tofummus? 

It’s honestly the best thing everHear that Sabra?  Consider this your warning…you MAY have been dethroned.

I will hold off on this latest obsession for now…

First things first.

For some reason the unit was -19 degrees today, which is the rationale I’m using to explain why I ate > 5000 kcals in 20 hours. 

Food = warmth, right?  I’m pretty sure Einstein already proved that theory, so I won’t take all the credit. 

But in all no seriousness, I had goosebumps and was shivering all morning – thus forcing me to down both my Clif and Odwalla bars by 9 am.  Not a fan.  I wasn’t the only losing feeling in my limbs either…everyone was complaining including patients, visitors, and staff. 

I actually bought a hoodie on my lunch break because I was so miserable.  I would SO much rather spend my hard earned $$ on WF goodies, not a random cheap gray piece of crap that I’ll never wear again (until the next ice age on the cardiac step down, that is…).

Lunch was nothing new or extraordinary.  More Newman’s Own Organic Protein Pretzels because they were so good yesterday…this time I mixed them with raisins and goji berries.  The dried fruit was getting stuck in the pretzel holes, which made each bite a mix of salty & sweet yummy-ness

The bar sitch was nothing new, just the tried and true red white and blue-berry clif and superfood odwalla. 

Plus a salad and hummus (shock). 

And since I was in the mood for some high raw additions, I went with an extra crunchy bag ‘o carrots and cauliflower, as well as a nanner and an apple.

Well, this all looks like a ton, but for some reason I was unable to keep my hunger at bay.  WTF!?  At what point do these posts become official evidence that I have a tapeworm?  (Gross).

Anyways, clearly I had to supplement my lunch since I had eaten well over 90% of it by 2 pm.  So I bought a tub of classic Sabra and fresh sourdough bread from Bruno’s as well as a Cashew Cookie Larabar.  I’m no calorie counter, but I’m pretty sure I tipped the scales into the Kirsty Alley realm by the time my shift was through (I keed, I keed).

Dinner was inspired by the GENIOUS that is Ellie (happy birthday love!).  After yesterday’s magic bullet recipe shout-out, she sent me a link for a recipe that is SURE to soon become a staple in my diet.  I have no CLUE why the idea of blending chickpeas and tofu to make an extra thick and extra protein packed hummus never occurred to me…but alas, I’m not perfect, and now all we have the evidence 😉

I made a few ton of changes, since I was (again) starving when I got home from work (and thus in my laziest state).  Aside from brilliant, there are no other words that could capture how fantastic this creation turned out.  I’m not saying my recipe rivals Newton’s Laws Of Physics in it’s ground breaking nature…I’m just saying it was finger/spoon/bullet-licking-good

In the first batch I used 1/2 the can of chickpeas (approx. 1 cup) along with half the “can juice” and 1/3 of the silken tofu.  The ONLY other things that went into the bullet were salt and cumin.  Channeling Chandler: could it BE any more simple?

I’d never tried this kind of tofu before, so I was a little iffy about it, but it was AMAZING.  Everyone must make this today.  Now.  Ok, you can finish reading first, but immediately after, ok?

It was a bit runny, so I’d probably use less “can juice” next time…but it was the perfect sauce-y texture to go over a big a$$ bowl of quinoa

After the veggies and quinoa were gone, I still had a little bit more in the bullet…and my tummy was screaming for it, so I scrounged, and scrounged, and scrounged some more…until I came across some Shirataki fake noodles from 1999.  Admittedly, I should have probably examined the expired-by-date a little more thoroughly, but the tofummus sauce needed a companion, stat!

To be fair, these noodles did nothing for the tofummus.  But, the sh!t was SO DANG GOOD it didn’t even matter.  I added in shredded carrots to try to help de-whack-ify the bizarre gummy texture of the “noodles.”

I can’t deny it.  I’m in love.

I went back to my fruit-lovin’ roots for dessert with a few chunks of honey dew.

Here’s the weird part about the day’s mega-eats.  I wasn’t even FULL when I went to bed.  There have been days when I have eaten less and practically rolled myself to the bedroom at night, and yet, I felt perfectly comfortable as I laid me down to rest.  The appetite is a wondrous thing, no?

    Chickpeas and tofu are two of my ABSOLUTE fave foods in the whole world…I need to make some tofummus. I also recommend making a a tofu salad (kinda like egg salad), using hummus as the “dressing.” Phenom.

    That sounds awesome! Glad the link was useable- I never thought of tofu hummus either…ack, need to get on that. Though I had some pretty awesome hummus this weekened- like, “jump on a plane overe here STAT”-worthy hummus.

    I end up randomly buying hoodies too when I am cold 🙁 Did you keep the receipt? You can just use the store as a library 😛

    I think that’s the greenist honeydew I’ve ever seen…whoa.
    Tofummus is officially on my “to try” list. I don’t usuall ybuy silken tofu but that sounds like a really good combo and I don’t think the firm stuff would work 😉

    At my job (you know my work environment…I think?) I always end up hungry too. I’ve heard that being cold burns more calories but that could be an old wives tale.

    First the tapeworm, then Kristie Alley…you’re killin’ me smalls! Could that tofummus LOOK any more delicious?!

    No worries about the calories…you obviously needed them, and if you were not uncomfortably full, that is even MORE evidence that your body needed the fuel to get through the day! Had you eaten less than normal the past few days? That could also explain the hunger…either way, everything you ate was VERY healthy, so no biggie 🙂

    Thanks for the info on the Magic Bullet sizes…I have always wondered. I am glad you did get something–now you can make the carrot miso dressing! Oh! And I could send you the homemade Lara bar recipe too, if you want it?

    I would have seriously died in those arctic temperatures…I’m cold natured anyways, and literally become paralyzed when I’m cold. bad news bears…

    AHHH sounds INCRED! I want a magical bullet! I could make so many cool things in the dorm room and creep out everyone on my hall by combining delicious things like chickpeas and tofu and dip every veggie and cracker in my minifridge in it! 😀

    I work in an icebox, so I just keep said crappy sweatshirt there… and since I’m never NOT wearing a hoodie, I don’t even really end up using it. You can borrow it! 😉

    what a nice yummy lunch!

    my work place is always FREEZING too .. i tend to get cold faster than other people, but still .. its always like 12 degrees colder than normal office spaces … i think all my coworkers are aliens

    i think i may start leaving said hoodie in my locker. no reason to continue the lunch time spending on nasty clothes. i got it at one of those “strawberry” stores which i had been avoiding ever since moving to nyc bc of the hoochie manequins int he windows…but it was the only place nearby the hospital. boo!

    id never bother to fight it. obviously my body was using it for something even if i dont know what. to answer your question, i dont think anything changed in my recent days eats…and i certainly hadnt been to the gym in days since i had work the entire weekend…whatevs, ive given up trying to understand my GI tract long ago…haha miso dressing is on the bullet to-do list. larabars, yes plzz…although they pretty much give the recipe on each bar already (dates, nuts, coco, mmmm)
