Toxin removal

Vegas may be a blast, but in my experience, the aftermath is enough to turn you off of the place for at least the next few months.  I feel like the door hit me on the way out…and by hit me, I mean knocked me on my a$$.

Not one to dwell on the past, I started Monday fresh and clean.  No point in wallowing in the pits of (booze-infused) despair.

Oatmeal with apples, blueberries, and Sunbutter was the perfect morning meal to get my system back on track.

I even went for a run, which felt friggin’ great.  Whenever I take a few days off, it feels so excellent once my feet hit the pavement again.  I felt like I was flying high, even though it was only a couple of miles around the neighb.

My lunch was thai inspired.

After last week’s debut of Tropical Traditions’ coconut peanut butter, several readers commented that it would make an ideal ingredient for thai flavored peanut sauces.  I thought this was brilliant and ever since the recipe has been in the back of my mind.

All I did was blanch kale and carrots and then add them to these rice noodles.

For the sauce, I mixed 1/4 cup coconut peanut butter, 3 tbsp Bragg’s liquid aminos, 1 tsp powdered ginger, and a splash of hot sauce.

I had seconds because it was THAT good.  Really really good. If you want some extra heat, you can add in extra hot sauce, but I thought it was brilliant as is.

Before heading in to my night shift I snacked on some pretzels, roasted salty almonds, chocolate covered almonds, and raisins.

Naturally, a 12 hour shift required caffeine injected into my face.

And with that, I was back in action.  It’s amazing how a shower and a few clean meals can bring you back from the dead in just 24 hours.

    I have a recipe I call Carribbean Coconut Rice with Garbanzos and Veggies + P.B….same concept of flavors, coconut milk, peanut butter, ginger, with rice and beans and veggies. Seriously, i think that coconut + PB are flavors I just couldnt ever get tired of! Great Thai idea!

    And Vegas…yes, let the detoxing begin 🙂

    i loveeee making peanut sauces/dressings! definitely adds some ‘umph’ to any dish.

    nothing like getting back on track to make you feel like yourself again. as much as i love exotic weekends, weekly routines definitely comfort me

    So true about a warm shower, maybe a run and some clean food bringing you back from the dead. Although my go-to back from the dead meal is usually sushi and I do not know why.

    A few years ago I was in Vegas with a nasty, nasty hangover and I received a call when I woke up from my best friend. She was calling to tell me she was getting married…in six weeks…in Vegas. The LAST thing I wanted to do at that moment was come back to Vegas! But, of course I did and it was worth it – I just wish I had known more about detoxing then because coming home that 2nd trip was rough 🙂

    Oh totally agree, I always feel so gross and dirty after a vacation…especially if it involved driving…and a shower and a few good meals totally hit the SPOTTT. I always find myself craving fruit and oatmeal literally as soon as I walk in the door. 🙂 I’m going to try your peanutty noodle recipe this week; it sounds unbelievably good…ok the pictures look unbeliveably good (even better!!) Thanks for ‘ze recipe, I’m so freakin’ STOKED to try it! AHH!! 🙂

    By the way, how do you cook rice noodles without them getting completely gummy?? Maybe it’s just the brands I’ve tried, but on the (very few) occasions that I’ve made them, they turn out a stringy, snotty mess. SO not appetizing.

    dear lordy, a jar of sunbutter caught my eye while i was strollin’ through tar-jay today & i had to buy it on your recommendations. ohmygoodness, it’s like i’ve died and woken up in justin bieber’s chest hair. that shiznit is delish. i may, or may not have cut the inside of my mouth while licking the foil lining that seals the jar.

    I love your theory. It is true that a few nutrient-packed meals can do (or undo) just about anything! I need to get on this tropical traditions band wagon but I have not seen it ANYWHERE in Canada…:( Glad you had an awesome time in Vegas, you guys deserved it.

    After reading about the coconut PB on your blog (long time reader, first time commenter!) I immeadiately ordered some! Hello, ‘inside of a Reeses cup’?? ‘Eating out of the jar with a spoon’?? I was sold. However what I recieved is horrible. It tastes like bitter chalky vasaline with perhaps a hint of coconut. My husband literally spit it out and had to rinse his mouth out because it coats the whole inside of your mouth with this taste. He has a major sweet tooth, so I didn’t really expect him to enjoy it, but I have eaten a multitude of unsweetened nut butters, and have no problem enjoying them. I rarely use coconut products, so I considered perhaps it is a taste I need to develop, although I have enjoyed shredded coconut and coconut milk just fine. Do you think my tastebuds are just not used to the coconut oil/butter, or do I have a bad batch?
